Calling all chocolate lovers, this one is dedicated to you.
Since my Triple Chocolate Protein Brownie recipe I’ve been looking for a new way to get my healthy brownie fix in a different form. I know that there is that saying that ‘if it ain’t broke don’t fix it,’ but I‘m always geared up for a challenge. After putting my thinking cap on I came up with this muffin recipe that is healthy, grain free and gives you that double chocolate hit when you are craving a chocolate fix.
- 1 1/2 cup ground almonds
- 3 tbsp unsweetened cocoa powder
- 1/4 cup powdered fruit sugar or stevia
- 3 eggs
- 1/2 tsp baking powder
- 1/2 cup melted coconut butter
- 1/3 cup dark chocolate chips

Preheat the oven to 180 degrees. Beat all of the ingredients together (except the chocolate chips) in a bowl. Mix well until just combined and pour in the dark chocolate chips and stir through. Try and make sure that the chocolate chips are evenly distributed throughout the batter.

Next portion the batter across 6 muffin cases and bake for 25-30 minutes until cooked, allow to cool on a baking rack.
To test that the muffins are cooked, use a cocktail stick or skewer to pierce through the centre. The cocktail stick should come out clean if the muffins are fully cooked.
I was so surprised by how fluffy these turned out, they are incredibly light and airy in texture. My first try of these was straight from the oven and it was all gooey inside, just how I like my chocolate brownies. If you are in an indulgent mood, these would be amazing eaten warm with some coconut ice cream, heaven!
These make excellent snacks for elevenses, your afternoon pick me up or a treat-me breakfast with some plain yoghurt and berries. Since they are super light and springy, they don’t sit your belly for hours afterwards resulting in that heavy sluggish feeling. Of course the powdered fruit sugar
Unfortunately my stash of these is long gone. They were just too good to leave sitting around in the freezer, but I think they would actually freeze very well. Now I’m off to get my thinking cap on again to dream up more tasty muffin recipes like this one.
How do you like your brownies? I for one much prefer a brownie with a soft gooey, fudgy centre rather than a fully baked one. Chocolate heaven!

These look and sound great! Mr PoP is a big chocolate addict so I will be trying them out on him at some point 🙂 And brownies? They have to be goey and fudgy!!

My uni friends and I have a bit of a crazy tradition that whenever we meet up we make a huge chocolate brownie. It’s more like dessert though as we never cook it long enough for it to be sliceable. We’ll literally eat it with spoons crowded round a table. We found a recipe ages ago and have sort of adapted it. Originally it was supposed to be a ‘healthy’ alternative because we used prunes instead of butter but with the amount of chocolate and ‘added extras’ that goes into it means it is so far from healthy now! Hehe.
