A traditional steamed pudding recipe with a citrus sponge and topped with sweet raisins – a comforting dessert from the Snowdon region.
As a youngster, my mum and her 7 siblings were practically raised on traditional puddings like this just like their own mother. My Nan was a whizz in the kitchen and always liked to spoil her brood with sweet and stick to your ribs puddings that were lovingly homemade by her very own hands.
I, however, never got to experience the joy of a homemade classic pudding as my mum never baked them for me and my brother, so I was very excited when the opportunity arose to bake a classic steamed pudding.
Even when I visited Wales I never came across the Snowdon Pudding, but it’s a classic Welsh dessert. For a little history, the genuine recipe for the Snowdonia pudding was first published in 1845 by Eliza Acton, who was one of Wales’ first cookbook authors to produce a book for the home cook. This recipe is pure comfort and although it’s not the healthiest of puddings, I’ve put my own slight twist on the original recipe to make it slightly lighter, like swapping out the refined sugar.

- 100 g vegetable suet
- 3 eggs
- 15 g cornflour or ground rice
- 50 g fruit sugar
- 100 g gluten free breadcrumbs
- 50 g raisins
- 75 g lemon Marmalade
- Grated rind 1 lemon

Mix all the dry ingredients together in a large bowl, except for a handful of raisins

Beat the eggs and add to the dry mixture

Grease a pudding basin and put the handful of raisins at the bottom

Pour in the mixture and boil/steam for 1 1/2 hrs, checking the water level from time to time

Turn out and serve with a white sauce, lemon sauce or custard.
After cottages.com got in touch asking me to recreate a regional pudding and my recent trip to Wales I knew that I had to try to make the Snowdon Pudding – a challenge in itself as I’ve never cooked a steamed pudding before!
What better place to cook such an iconic pudding than in the place that it was born? After perusing the cottages.com website, I’ve spotted several beautiful self-catering cottages that could make that dream come true. I’m particularly taken with Y Gorlan with its stunning views and set at the base of Mount Snowdon.
I always prefer self-catering holidays when we travel because I think it gives more freedom to cook your own food and experience the local delicacies like this delicious Snowdon Pudding. It would be quite the treat to come back to after a long walk around the stunning scenery that Snowdonia has to offer.

That looks amazing! I do like a proper pud but I don’t like too much custard.
Traditionally it’s served with a wine or lemon sauce. Cream would be a lovely alternative too.

I absolutely adore steamed puddings but have never come across Snowdon Pudding before. Love the look and sound if it. Bet it would be perfect with lashings of custard in a cosy cottage.
It’s perfect with lots of custard and a cosy cottage would be the cherry the cake so to speak.
