Now who loves chia seeds? Hands up if you do. If not, then this summery breakfast recipe is surely going change your minds in an instant.
Way back in May I wrote a post all about the humble chia seed, like a chia seed 101, including information on their health benefits, what they are and how to use them. If you missed it you can catch up here. The appeal of chia seeds is that they are packed full of marvellous nutritional value. Just 2 tablespoons of chia seeds can include a 1/3 of the recommended daily allowance for fibre, a hefty load of omega-3 and fatty acids, plus a heaping supply of calcium, protein and vitamins.
Even though many of us know that they are good for you, there are many that still have no idea about the health benefits or even how to use them. Enter my Strawberry, Mango & Coconut Chia Sundae, perfect for breakfast or an afternoon snack. This baby will leave you satisfyingly full, craving more and loving chia seeds. Well here’s how to make it!

- 1/3 cup chia seeds
- 1/3 chopped mango
- 1/3 cup sliced strawberries
- 1 1/2 cup unsweetened almond milk
- 1-2 tsp agave nectar
- 1 tbsp coconut oil
- 2 tbsp shredded coconut

Soak the chia seeds in the almond milk for up to 8 hours or preferably over night in the fridge. Once the chia seeds have swollen up in the almond milk, stir in the coconut oil, shredded coconut and agave nectar.

In a sundae glass layer the chia seed pudding with the mango and strawberries, alternating between each layer. Alternatively serve it all together in a bowl and enjoy.
Not only does this put you on the right track to start your day it also feels a bit indulgent too, especially if layered up like a sundae. The coconut oil adds a lovely creaminess to the chia seed pudding, making it slightly rich and decadent. You can’t go wrong with coconut paired with mango and strawberries, but I’m a bit of a coconut freak anyway so I tend to love it with anything.
There are lots of healthy fats in this sundae from the chia seeds and coconut oil. Fats were once feared in the healthy living world, but they have tremendous nutritional value if consumed from the correct sources. Healthy fats, such as omega-3’s have been shown to reduce the risk of heart disease, hypertension, stroke, joint pain and rheumatoid problems. Additionally, they also keep us fuller for longer which will help curb any mindless snacking.
If you’re not yet convinced of the nutritional power of these power house seeds, then give them a go. I know that you won’t regret it. Enjoy!

I love Chia Seeds! I’ve used them mainly in a chocolate, avocado pudding recipe I found, really easy and delicious.

I eat chia seeds every day with my porridge. I love them. They make my porridge so thick and stodgy, which is exactly how I like them. I can’t stand watery or liquidy porridge.

Yum! Thank you for sharing this because I just got into chia seeds not too long ago and made a delish chocolate pudding with it with NO sugar and it tasted so indulgent! I am definitely gonna try this for the times I want something fruity!! <3

I like chia seeds- I either add a tbs to porridge, or to overnight muesli so they have time to soak up the liquid.

Yummy this looks great, so colourful and I bet the texture is great too. I have to admit I don’t really use chia seeds, I used to have them in porridge, which was yummy and have tried a chia pudding but I don’t really go crazy for them in the way I do other nuts and seeds. It is fun the way they swell up though!
