A chai latte and a Sicilian lemon muffin are one of the best reasons to abandon your work.

The sun was shining outside and I was eager to get out and enjoy it on Wednesday afternoon.  I went for a walk and stopped for a chai latte and one of these delicious muffins.  It felt good to have some time away from my desk and I ended up spending an hour in perfect silence reading my pregnancy book on my tablet…bliss!

I probably made one of the best stir fries in a long time this week.  It just looked too good to eat, yum!  This was a chilli beef stir fry with vegetables and noodles and it was so simple to make.  The only flavourings that I added was chilli (obviously!), garlic, ginger, honey and soy sauce.  I’d picked up some speciality mushrooms to add which made it that tad bit more special.

There are always a couple of green smoothies in my week and this one was my favourite: spinach, banana, flax, vanilla protein powder, almond milk and coconut water.  Pretty basic, but oh so good, I like the simple things in life.

I had this salad during the week and again it was very basic, just 2 boiled eggs, courgette, tomatoes, sweet corn and mixed leaves, but despite its simplicity it tasted really good.  Love those creamy hard-boiled yolks, although I am missing my runny egg yolks, which something I will be back on again after my lil’ man arrives.

Now I know that this doesn’t look all that pretty, but it tasted amazing.  I made cooked some organic beef mince in a tomato sauce and added some cannellini beans for some extra protein. Courgette spaghetti is one of my favourite go to foods and they go really well with the beef mince.

Such a pretty picture, even if I do say so myself…ahem!  This was breakfast on Monday morning (I think!) and a great start to my day.  A super bowl of deliciousness of fresh strawberries, blueberries, Greek yoghurt, honey and peanut butter.

Eggs have become a staple in my lunch during my pregnancy, especially in my first trimester when I couldn’t stomach vegetables. This was a 3 egg omelette topped off with red onions, cheese, mushrooms, sweet corn and coriander, loved it!

Getting more strawberry action here, they look like lucious red gems.  I’m so glad that we are approaching strawberry season here in the UK as we do grow the best strawberries in my opinion.  I had this bowl for a snack with natures finest coconut water.

You can’t beat a descent bowl of porridge for breakfast even when the sun is shining.  Organic porridge oats made with unsweetened almond milk topped with a chopped banana, blueberries and almonds.  I would have added cinnamon on top too, but it seems like the cinnamon thief has been in my laser and stole my jar.  I’m not sure where it has gone (or where I have put it), definitely a hint of baby brain there.

My workouts this week looked like this:  

Monday – REST

Tuesday – morning gym session (20 minutes gentle cardio and strength routine)

Wednesday – REST

Thursday –  morning gym session (20 minutes gentle cardio and strength routine)

Friday –  Prenatal yoga podcast

Saturday –  Lots of walking around at the Baby Show

Sunday – Prenatal yoga DVD with Tara Lee and walking

22 weeks

It was such a gorgeous day yesterday that I had to put on a maxi dress and sandals, a wardrobe staple for this summer me thinks! 

Yesterday my bump turned 22 weeks and it’s definitely popped out a lot more this week.  I just love it!  It’s so nice to finally have proper and noticeable pregnancy bump.  I’m feeling really well at the moment and very healthy.  All of the tiredness from my first trimester has definitely disappeared for now and I think that I have found my pregnancy glow!

This week I had a 21 week appointment with my midwife, basically a catch up after my 20 week scan.  My midwife is lovely and I could talk to her for hours.  She listened to my baby boy’s heart beat and it sounded so strong and healthy, I’m so proud of him. 

Yesterday we had a lovely family day out at the Baby Show and managed to finally settle on what pushchair we like and picked up some bargains including some organic cotton baby grows which are just too cute.  Also, we bought some essential equipment such as an electric breast pump, bottles and steriliser, 100% cotton muslin squares, Grobags (baby sleeping bags), changing mats, Waterwipes (99.9% water and 0.1% fruit extract), and a nappy disposable bin.  We’re really enjoying getting all prepared for his arrival in September.
