Hello folks!  The sun is shining beautifully this morning, which is a far cry from the horrible storms and gale force winds that we have being experiencing in the UK.  So far we have been pretty lucky where I live in terms of the weather, apart from one street by the river that has been flooded since New Years Day.  On Friday night, the gale force winds and rain hit and although my little village held its own, the energy distribution company for my area did not.  We greeted Saturday morning with a power cut with no clue when it was going to end.

Rather than sitting at home worrying about all of the food in the freezer and fridge we decided to go out and do some window shopping and even test drove a new car.  We had a pub lunch and I had the chicken calzone made with freshly made dough and topped with guacamole and natural yoghurt, it was really yummy.  Luckily by the time we got home at 6 pm the electricity was back on.  Iโ€™ve never been so excited to see the street lamps turned on when we were driving back to our house.

This fajita bowl was delicious and the perfect Friday night treat.  I cooked some chopped chicken thighs, peppers and onion in taco seasoning and tomatoes and added mixed leaves, avocado, salsa, 2% Greek yoghurt, jalapenos and grated cheese.

My Baked Asparagus and Caprese Salad Topper recipe has been working wonders for quick lunches this week. Love this!

Since I was off work at the end of the week I spent a little bit more time on breakfast on Thursday by making a pancakes.  I ended up making 2 large pancakes and sandwiching them together with chocolate almond butter and banana in the middle.  I love taking my time over breakfast, so this was great!

Another great breakfast, well t was actually dinner but looks like breakfast was this plate of loveliness.  A stuffed mushroom with scrambled eggs and smoked salmon, so quick and easy to make.

Another favourite this week is this edamame bean salad that I picked up from Waitrose with more smoked salmon.  I seem to have a thing for smoked salmon this week.

It has been really lovely having the last few days of last week off to relax and catch up with a few things.  I feel very rested at the moment and it was nice not to rush around for a change.  I hope this state of relaxation lasts, although I doubt it as itโ€™s looking like a busy week aheadโ€ฆeek!  Hopefully we are turning the corner with the weather this week.  I hope none of you have been affected too badly, some of the pictures have been horrific.
