This weekend has just been the best. The weather was just gorgeous, we paid the deposit on our reception venue and for our photographers, I now have a week off from all forms of work (thesis included) and it was my birthday today.
I had a little lie in this morning and didn’t go out on my usual short run on a Sunday, which I think my body appreciated because of the clocks going forwards by an hour this morning. Instead I used the extra time to make a super birthday breakfast of Coconut Flour Pancakes with Coconut and Peanut sauce.
These were so light and fluffy. To make them I used a basic pancake recipe of 1/2 cup of coconut flour, 1/2 cup of spelt flour, 1 tsp of baking powder and 1 cup of rice milk. To make the sauce I mixed peanut flour with coconut milk to make a thin paste and chopped up some fresh strawberries and mango to serve…seriously good!
Birthday OOTD: Bat wing floral print t-shirt, New Look, skinny jeans, Primark, belt, Zara, bracelets, Lola Rose, black wedges, Primark.
With the wedding coming up and on a tight budget I decided to have a quiet birthday this year for a nice change and asked for donations towards my wedding dress as gifts, which has worked out perfectly.
After getting ready I headed over to my hometown to meet up with my girlies who are also my bridesmaids. We were supposed to have a bridal make up tutorial at Bobbi Brown, but they had to cancel as one of the make-up artists rang in sick, but it’s just another excuse for another girly day.
We spent most of the day window shopping and looking at bridesmaids out fits and we have picked out a wonderful dress for them to wear- they are going to look stunning.
Of course with all of that walking around we had to stop and refuel. We had quite an epic lunch at and Italian restaurant. We went all out on a carb overload with a bowl of pasta to eat and a pizza to share.

It was quite safe to say that we were officially stuffed after that, but everything was just gorgeous. Afterwards we headed to Starbucks for coffee…
I had and Hazelnut soy latte topped with cinnamon…yum!
It has been such a great day of catching up and tasty food. I really am blessed with some family and friends. In fact at least every other of my cards has a cupcake on the front of it, either I’m very predictable or my loved ones know me very well. It could be worse, all of my cards could have celery on the front as my kindly explained. ![]()
One of my friends even bought me a cupcake from Patisserie Valerie, which I am about to devour now.
The frosting got a little bit crushed on the drive home!
The celebrations are continuing this wee though as it is my seven year anniversary with Alfie, we will also be enjoying our week off together in the sunshine and also visiting my lil’ bro in Sheffield wear I am being treated to a mini shopping trip to fill my wardrobe which I have just cleared out. All topped off with hopefully buying my wedding dress on Saturday! I can’t wait!
