Recently I’ve really jumped on the green smoothie train, especially now that the temperatures are warmer, a green smoothie in the morning seems like the most refreshing way to start the day. I was so happy to realise that my auntie is also smoothie mad like me and she makes one every morning before work without fail. One of her staple smoothie ingredients is cashew nuts and ginger something that I had never tried before. Fair enough, I’ve tried nut butters in my smoothies a billion times over but was skeptical to see how adding whole nuts would be any different.
Well, after making my first ever smoothie with whole cashew nuts my *mind was blown*! OK, a slight over-exaggeration there, but I was crazy over how super creamy my smoothie had become and now I’m a complete convert.

- 1 apple cored
- 1/2 an avocado
- 1 thumb sized piece of ginger
- 1/4 cup cucumber
- 1/4 cup cashew nuts
- 1-2 tbsps . honey or maple syrup
- A handful of spinach
- 1 cup of unsweetened almond milk

Simply put everything in a blender and blitz until smooth

Serve and enjoy!
Add some more almond milk if your blender needs help breaking everything down.
Cucumber is another new smoothie ingredient that I keep adding and obsessing over. It doesn’t actually have a strong overall taste, but it gives the smoothing a refreshing coolness that I’ve enjoyed on these warmer mornings. Since they are made up of so much water they’re super hydrating and make a lovely base for smoothies and juices.
I really love the ginger in this smoothie, it gives it a really subtle kick and some heat. Alfie has a cold at the moment so I think I will be making lots of these and loading up on the ginger to help ward off any germs and invest in all that plant power goodness.

Oh this looks amazing! Sadly due to moving house etc I have no blender until August but this is definitely going on my list! Pret do a great apple ginger shot that I always get when I feel a cold coming on, not sure how well it works but it sure makes my head feel a little better!
I love the juices from Pret, so handy when you’re on the go. I had one of their green juices the other week and was really impressed. An apple and ginger shot sounds awesome! August needs to hurry up so that you can get blending again.

Apple and ginger is one of my favorite combinations!
I’m sold. I’m going to try cashew nuts tomorrow in my daily smoothie. I add chia seeds every day as they’re an excellent source of plant based protein and high in fibre. Cucumber sounds interesting too. Hmmmm. Looking forward to trying this recipe out.
And my favourite way to use ginger? I found some cheese with ginger in The Netherlands last week and it was the most divine thing ever. I ate the whole packet as no one else liked it!
I’m just about to make my breakfast smoothie, I’m going for: almond milk, banana, blueberries, strawberries, Greek yoghurt and oats! That will keep me filled up until lunch time 🙂

I love the idea of adding nuts to smoothies. I often find smoothies can be a bit empty in terms of how filling they are but adding things like this definitely makes them appeal more to me. Love cashew nuts too!

Not had a ginger smoothie before but I am so up for anything and with summer under way its definitely a nice way to cool down.
I had a smoothie with pretty much exactly these ingredients in Sydney when I first came over and it literally blew my mind. Something about the avo, apple, cashew and ginger combo that is just ridiculously delicious! This one looks so good love!
I have added nut butter to smoothies, but never whole nuts. It sounds lovely though.
