snack happySnacking can be one of the most difficult things to get right when trying to stay on track and pursue a healthy lifestyle.  There is always too much temptation when I am out and about, but luckily I seem to have this sussed when I’m at home.  Recently I have been taking part in the 21 day #SnackHappy challenge created by California Almonds.  So for the past two weeks I’ve been replacing one of my regular snacks with a portioned out packet of almonds.  The cute little tin has been perfect for carrying my trusty almond snack around with me in my bag when I have been out and busy.  It’s also great as it’s the perfect size to fit the correct number of almonds that constitutes as a healthy snack, totally taking the thinking out of snacking.

I have been mixing things up a little bit by incorporating a chopped apple of dried berries with my portion of almonds and have noticed that the healthy fats in the almonds fill me up enough between meals.  Also,  I’ve been sprinkling them on my salads to make them more satisfying and to bulk them out a bit more.  Nuts and chopped fruit taste amazing on salads, trust me!

As part of the #SnackHappy campaign launch I got to attend a very swanky event in London at The Ice Tank, which was attended by the challenge ambassador Denise van Outen.  She gave a lovely talk at the beginning about how snacking on healthy foods like almonds has helped her on her healthy living journey.  There was so much going on including a fantastic spin on a pick n’ mix that was full of tasty healthy snacks.  I went home with a kilner jar full to the brim with goodies that now sits on my desk for whenever I’m feeling peckish.  

Additionally, there was a guest chef cooking up tasty almond inspired delights such as plum and almond bites, chicken skewers with almond satay sauce, smoked salmon blini with almond pesto, mini almond tarts, almond vegetable rolls, olive and almond tapenade, almond French macaroons, triple almond brownies and almond butter flapjacks.  It all tasted delicious as it sounds, who knew that you could make so much with almonds!  They were also making alcoholic cocktails with almond milk, which unfortunately I couldn’t drink because of my little lentil, but they looked gorgeous.  You could also have a massage and a manicure too, such a fun event!

I’m a big fan of snacking in almonds anyway, but think this is a great challenge for anyone wanting to get on track or feel that their snacking has got out of hand.  If you would like to take part in the 21 day challenge remember to tweet your progress or pictures using the #SnackHappy hashtag.
