Last weekend I decided to get my bake on for Easter, so as well as my Orange and Cranberry Hot Cross Buns as a major cupcake fanatic I also had to bake some cupcakes too…obviously!

After thinking and searching through the gazillion amount of cupcake recipes that exist- and I am being serious!   I mean cupcakes have to take the biscuit for the one baked food product with the most possible variations.

Anyway, after stumbling across this recipe for my favourite Red Velvet Cupcakes I knew that I had to bake them, with my own little spin on them.  Firstly I made the sponge dairy free and then made a lovely impromtu dairy free frosting too using dairy free cream cheese, which I have tried by itself and didn’t really enjoy but with a few baking flourishes it tastes great.

Red Velvet Cupcakes with Coconut Cream Frosting

Ingredients (vegan, makes 12 cupcakes)

  • 1 1/4 cups of plain flour
  • 1/4 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1 tbsp of cocoa flour
  • 1/4 cups of non-dairy spread (I used Pure)
  • 2/4 cups of golden caster sugar
  • 1/2 tsp pure vanilla extract
  • 1/2 cup of unsweetened soya milk
  • 1 tbsp of red food colouring

Cream Coconut Frosting:

  • 220g of non-dairy cream cheese
  • 1/2 teaspoon vanilla extract
  • 20g of icing sugar
  • 40g of coconut flour
  • desiccated coconut for sprinkling

Preheat the oven to gas mark 6 and line a 12 cupcake tin with liners. Sieve the flour, baking powder, baking soda, cocoa powder and salt in to a bowl and mix together.

In a separate bowl cream together the non-dairy spread and sugar with a electric hand whisk or with a mixer until light and fluffy (takes around 5 minutes).

Next in a measuring cup combine the soya milk and red food colouring.  Add the liquid and the dry ingredients to the whipped sugar and butter in 3 parts, alternating between the two ending with the flour.

Mix together with a wooden spoon until just combined.  Spoon the mixture into the cupcake liners so that they are 3/4 of the way full.  Bake in the oven for approximately 15-20 minutes.  They done when they are well risen and springy to the touch or a cocktail stick comes out clean when placed in the centre of the cake.  Allow to cool on a baking rack.

To make the frosting mix together all of the ingredients, sweetening to taste.  Place in an icing bag or spoon on to the cool cupcakes and sprinkle on the desiccated coconut.  These would look great with some chocolate cupcake decorations or cupcake toppers if your icing skills aren’t up to scratch.

These were really delicious and the coconut frosting is lovely and not too sweet.  I really enjoyed and so did everyone else- they didn’t even know that they were vegan.  It’s so great when that happens!
