I was contacted by the fab people of Most Wanted to create a healthy recipe under 500 calories and comes under Β£5. With strawberries in abundance right now and the fact it’s now time for Wimbledon I decided to make them a focal point of this recipe challenge.
You just canβt beat the taste of British strawberries. Their bright ruby red colour and natural sweetness makes them one of my favourite fruits this time of year.
Not only are British strawberries in season, but the unpredictable weather that we have been experiencing in the UK means that strawberry growers are overloaded and selling them off cheap. Not like I need a reason to buy strawberries, but I believe in striking when the irons hot and have been making the most of the cheaper prices.
I like the natural sweetness of strawberries do the talking and always use them very simply. Now that we have entered British summer time and salad season is underway I thought it would be nice to include them in a simple and refreshing salad.
Ingredients
1/2 cup of strawberries
1/3 cup of blueberries
1/3 cup of cucumber
mixed salad leaves
1/4 cup of almonds
Feta cheese
Balsamic vinegar
Chop the strawberries and mix together with the blueberries and cucumber. Place the mixed salad leaves on a plate and pour over the strawberry mixture. Crumble over the feta cheese and add the almonds to the salad. Add enough balsamic vinegar to satisfy your taste buds.
The sweetness of the strawberries really makes this salad. They work wonderfully with the sour feta and sweet balsamic. You could make this salad your own and add a grain like quinoa or bulgar wheat. Also, I think the mixing in basil or mint leaves would also add a nice touch.

that looks yummy. I read this post on the bus prior going to food shopping and I bought all the ingredients except for the almonds! Will have to go back and then try it out! I might add some quinoa indeed to have more proteins or I will be hungry 1h after! x

Mmmm feta with strawberries sounds so good. I love adding fruit to salad. It just jazzes things up so nicely. Does strawberry jam count in scones? Haha!
