Hello friends!  Hope you are all having a brilliant weekend.   Waking up and doing a yoga session, doing the weekly grocery shop and drooling over all of the Christmas food, baking and cooking some wonderful Christmas recipes and relaxing in front of the fire with my favourite candles burning – my has been pretty restful so far.  Just what the doctor ordered.

Yesterday morning after doing an amazing yoga session, boy I needed to stretch, I made breakfast.  I’ve been sent some new protein powders to review on the blog: butterscotch ripple of vanilla crème anyone?  Anyways I fancied making one big protein pancake using the butterscotch flavour and, well…it ended up in a bit of a mess.  A complete recipe fail.  I think it’s because I had the ratio to protein powder to liquid wrong, meaning that the pancake was quite crumbly and difficult to remove from the pan.   Despite it’s appearance it did taste great, especially when topped with Greek yoghurt and super drippy peanut butter.

We spent quite a long time in the supermarket looking at all of the Christmas decorations and food.  Man, why does food always look even more delicious at Christmas time?  Alfie also wanted to get his hair cut, so by the time we got home it was quite late and I had definitely left it too long to eat anything.  Luckily I had some leftover squash soup to tide me over:

By the time we had finished packing the shopping away I was still hungry so we had an early dinner of fajitas using organic beef:

Alfie and I cooked these together which was a nice change.  We had them with all of the trimmings: sour cream, salsa, guacamole, cheese and jalapeno peppers.  I had mine in lettuce cups, but I had over filled them and they were far too messy, so I had a couple of corn tortillas to help with the mess.   I went back for some more of the meat filling too, beef fajitas are yummy!  I don’t usually serve fajitas with cheese, but this was quite a tomato-y sauce so it worked really well.  Thankfully, there is plenty of leftovers for more fajita fun in the week.

Much later on in the evening I was feeling snacky so ended up eating lots of sweeties and a bowl of frozen cherries with Greek yoghurt and dark chocolate chips with a glass of red wine.  Great evening snackies!  My sugar levels were through the roof after the sweets, but that’s ok as they appear to have balanced out again this morning after my luscious green smoothie.

I’m having a super productive morning, so far I have put the laundry on, gone to the gym and now I’m roasting a chicken and making something festive.  If it tastes as delicious as it sounded in my head then I’m onto a winner with this new recipe.

Do you always overload your fajitas?  I never learn.  They are so amazingly delicious, but damn they are messy!
