If you follow my Instagram feed, then you may know that I’ve been addicted to my green smoothies recently.  In the winter time, I still love them but tend to steer clear of them as it’s far too cold.  

Now that the weather has improved I’ve lapped up the green smoothie goodness, they’re just so refreshing to drink in the spring sunshine.  It was only yesterday that I was drinking my green smoothie that I had made for my afternoon snack in the garden and soaked up some vitamin D.

smoothie 4My go-to green smoothie that I know will always taste gorgeous is a banana and nut butter combo…nut butter with anything is amazing in my books! Making a decent green smoothie is an experimental process, sometimes they work and sometimes let us be honest they can taste God damn awful.  In most cases, I think you’ve got to find what works best for your own taste buds and I’m now pretty good at blending a decent green smoothie to nourish my body and make me feel awesome. 

Energy Boosting Sunshine Green Smoothie

A fabulously delicious green smoothie that tastes of summer and will give you an energy boost.
Servings: 1

Ingredients
  • Half of an avocado
  • 1/3 cup fresh pineapple
  • 1/3 cup fresh mango
  • 1 tbsp coconut oil
  • 1 big handful of spinach
  • 2-3 cups almond milk
Instructions
  1. Prepare the fruit and whizz up in a blender until smooth.
  2. Find a funky retro straw and drink up!

I don’t know about you, but there are some mornings or afternoons when I feel like I need coffee through an intravenous drip.  Like a shot of caffeine, this fruity green smoothie really gives you an energy boost.  The zingy flavours from the pineapple and mango are really rejuvenating and is a fantastic nourishing and green alternative to starting your day with a caffeinated kick.  Being packed full with energy boosting vitamin C it’s the perfect way to start any day of the week.

Not only is pineapple great as a natural energy booster it’s also a fantastic source of bromelain, an enzyme that helps to digest food and prevent bloating.  You all know that I’m always singing about healthy fats, well this smoothie has those in abundance too…winning!  The avocado adds a lovely creaminess and the coconut oil gives it a healthy pino colada twist.
