It feels like most of the recipes that I have been posting lately are just soup recipes, but I have been eating so much of it lately I just can’t help it. They are so easy and quick to make that when I’m at home I will just whip up a quick batch of soup for lunch at it will last me a couple of days or I can store it the freezer for a rainy day.
I fancied something a little bit different from my usually wintery and comforting soups that I usually make and decided to opt for a refreshing spring inspired soup instead.
Ingredients (vegan, makes 2 servings)
2 ½ cup of edamame beans
½ an onion chopped
2 tbps of green pesto (I used shop bought)
2 cups of almond milk
½ litre of stock
Seasonings to taste
Heat a little oil in a pan and fry off the onion until softened. Pour all of the ingredients into a blender and blend until smooth. You may want to add more or less stock depending on how thick or thin you prefer your soup.
Pour the soup into a pan and heat through for 10 minutes.
It’s as easy as that!
I ate this with some Ryvita crackers on the side and it made for a delicious and quick lunch. The addition of the almond milk really makes this soup lovely and creamy. You could also use the same recipe using peas if you cannot get hold of edamame beans- I usually get mine from the frozen section in Tesco’s. It would be great with the addition of crunchy pancetta or bacon lardons on top too!
