On most mornings I like to make a bit of a performance over breakfast, my most favourite meal of the day. Even with a busy schedule like mine I like to wake up early enough to ensure that I get time for my leisurely breakfast…it’s almost like a ritual.
Breakfast on Christmas morning should be no exception. In fact given the occasion it should be bigger and better than EVER! Normally on Christmas morning I like to have a toasted bagel with cream cheese and smoked salmon or sweet mince pie oats. I got my thinking cap on and thought it would be nice to change it up a little and thought Christmas muffins would work a yummy treat!
Ingredients (makes 8 medium sized muffins)
1.5 cups of wholemeal flour
1/4 of powdered stevia (Truvia)
1 tsp of baking powder
1/2 tsp of bicarbonate of soda
zest of 1 orange
1 tsps of cinnamon
1/4 tsp of nutmeg
1/4 tsp of ginger
1/4 tsp of cloves
1 tsp of vanilla extract
1 cup of unsweetened almond milk
2 tbsps of melted butter
1/2 cup of chopped pitted dates
1 apple diced
Preheat the oven to 180 degrees and line a muffin tin with paper cases.
Firstly beat the stevia and butter together until creamy and smooth. Place all of the dry ingredients into a bowl and mix together before adding to the butter and stevia mix. Stir in the flour mixture and add the almond milk a bit at a time until well combined. Next stir in the chopped apple and dates.
Pour the batter into the prepared muffin tin and bake for 20 minutes or until golden brown. Once baked take them out of the oven to cool before diving into perfect muffin deliciousness.

These are so delicious and moist. I love eating these warm with butter spread on top and chopped fruit on the side, it’s all about balance, right! I’ve had to freeze the rest of the batch to help save me from myself.

I like having a cinnamon roll- as I don’t like the roast dinner etc, I tend to have a fairly normal lunch, so I like to have a treat breakfast. 🙂

I always have Christmas breakfast with my family, although it ends up being more like brunch. I like the idea of muffins, but the bagel, cream cheese and smoked salmon grabs me even more!

On Christmas morning I usually have exactly what I normally have, how boring is that?? But then I don’t tend to vary my breakfast that much. Even on holiday! I’m a creature of habit…I love my oats 🙂

Yum apple and date sounds like a good combo! Breakfast is usually my favourite meal of the day, but I’d tend not to go for something major on christmas day, either snacking on presents, oats or a smoothie!
