What a fantastic week it’s been! My race pack for Race For Life arrived on my doorstep earlier in the week and I can’t wait to run it this summer. I realistically opted to run a 5K this time around despite running the 10K in the past. It’s been so long since I’ve run anywhere that I thought that this was the best choice for me. After having gone for my first run in over a year last week, I’m really happy to be running for Race For Life this year and super excited to announce that I’m part of their official blogger team. Running for such a fantastic cause should keep me motivated to keep my training up as I’m hoping to sign up for some other races in the summer too. I’ve officially caught the running bug!
My week has been fuelled by avocado it seems because I’ve eaten so much of it. Topping my toast with mashed avocado and serving one slice with crumbled feta cheese and the other with maple syrup was truly one of the best breakfasts in a long time.
I couldn’t resist buying some duck eggs whilst picking up some groceries the other day. They have the fattest runny yolks that are so rich and creamy, so obviously I was in heaven whilst eating these fried eggs with avocado. My auntie is trying this combination for breakfast this morning, I hope she likes it.
More fried eggs for lunch this time with a baked sweet potato with butter and edamame beans for a quick and speedy lunch, extremely good!
I’ll be posting the recipe for this amazing paleo friendly quiche with a cauliflower and quinoa crust later this week and I can’t wait to share it with you all. I had a wedge of it with some maple salted roasted sprouts and I’ve eaten it for lunch for most of this week.
Banana bread is one of my favourite cakes, so I treated myself to a slice after postnatal Pilates. I split it in half, topping one side with raw hazelnut butter and the other with Nutella with a chopped apple.
Well, because every girl needs a 1Kg tub of peanut butter in their lives I received this in the post from the guys from LA Muscle and I think my heart skipped a beat. It’s so creamy and drippy, I got a spoon and dived right in.
I was surprised with this gorgeous bunch of flowers, rose cava and boxes of my favourite chocolates yesterday for Mother’s Day, my hubby knows me so well. My mitts will be around the sea salt caramel truffles later that’s for sure, love them! I’m also being treated to a pamper session at the hairdressers next weekend as my poor hair is in desperate need of some TLC and I’m looking forward to a couple of hours (or day considering the state of my hair!) to myself. Since this is my first ever Mother’s Day with my baby it feels very special. Happy Mother’s Day to all of you fantastic mamas out there!
Are you taking part in any races this year? I’m hoping to find another one to run for Alzheimer’s Disease as my lovely Nan was diagnosed with it in January.

Loved reading this! I’m currently obsessed with avocados! So delicious and so healthy!! I’m also planning on doing my first ever 5k this summer…gonna start with a color run! Something fun…to hopefully keep me motivated!!!

I only have two races lined up and that’s the Southampton Half in May and the Liverpool marathon in June. Exciting stuff (if I get there!)
