If you like the flavour of a mince pie, but not a big fan of all that pastry this mince pie nice cream recipe is a fantastic alternative.  Not only does it only contain 3 ingredients, it takes literally seconds to make, in the blender.   We do love our mince pies, however, sometimes it’s nice to have a healthier option up your sleeves that tastes just as good.

In fact, it tastes just like Christmas and uses one of my favourite ingredients at this time of year, sweet mince pie filling.  I definitely like to make the most of it during the festive season and wanted to incorporate it into something a bit different to a traditional mince pie wrapped in pastry.

Ingredients
  • 2 frozen bananas
  • 250 ml a2 Milk
  • 2 tbsp organic mince pie filling
Instructions
  1. Pour all the ingredients into a blender and whizz until smooth.
  2. Serve and sprinkle over your favourite toppings.
Obviously, you can use the basis of this recipe to create so many nice cream flavours.  You can throw in some nuts, dried fruit and puree, chocolate chips.  I fancy trying a peanut butter and dark chocolate chip version next time, yum!

So that the nice cream develops a seriously creamy texture I added a splash of a2 Milk, a pure and natural milk that is free from the inflammatory A1 protein and has been proven to be better for your digestion.  We really like a2 Milk because regular cows milk that contains the A1 protein causes my husband some discomfort, so it’s great that he can still enjoy cow’s milk which is kinder to his digestion.  Also, there is no difference between the taste and texture a2 Milk and regular cow’s milk except for the presence of the different proteins.

I had a couple of scoops of this sprinkled with toasted flaked almonds the other night with a Christmas movie in front of the fire.  It’s great as a movie snack, but would also be wonderful for dessert after Christmas dinner, especially if you have a guest that dislikes Christmas pudding.
