Italian Inspired Pitted Black Olives mixed with rosemary, fennel, thyme, and lemon. These can be whipped up and enjoyed immediately with a glass of wine or your favourite tipple when the long summer evenings arrive.
Is anyone else dreaming of sun, sea, and sand at the moment? It feels like the weather is mocking me because even though it’s spring in my head the weather just doesn’t want to play ball. Regardless what the weather is doing, I’m trying to break away from the grey wet weather and find comfort and sunshine in my food. One of my favourite things to do when the weather is gorgeous is to sit outside with a drink, some nibbles and good book or magazine secretly pretending that I’m in the Italian Riviera, a place that I’m dying to visit soon.
On these occasions, like with all my meals, I don’t want to be slaving in the kitchen of hours creating my tasty snack. Fragata has just released their Black Olives With Sea Salt in Waitrose, which come as ready to eat pouches that can be eaten on the go. They’re just the right size for one, however, I’ve been mixing them with other simple ingredients so they take on a totally different flavour. Olives mixed with delicious herbs and lemon is an easy way to jazz them up and reinvent them. I was approaching this recipe with a rustic Italian style so opted to add rosemary, thyme, fennel seeds, lemon and extra virgin olive oil, so simple but effective, just like all Italian food.

I love how you took these to the next level! The flavor sounds amazing!
I’ll have to try those Fragata olives. I actually prefer buying olives in a pouch. I can never get through a jar and they are easier for carrying around (into work etc). Loving your tweaks. Pinned, Stumbled and flipped.
Olives are one of my most favourite things to add to a salad or to have just as a snack, I love the idea of mixing them with herbs for an extra flavour boost.
We’re huge Fragata olive fans in this house and I know everyone here would love your recipe;-)
I’m such a glutton for olives and the Fragata ones are really good. If I could just reach right into the screen to get some I would!
I am totally going to have to share this with my parents. They sound absolutely delicious and definitely something I need to give a whirl ASAP for myself too!
I know how you feel! I’m all about experiencing the warmer weather, but the weather won’t cooperate. Glad to have dishes like this though! It’s really makes up for the weather.

I’m not a fan of olives but my girls love them – they would love these!
These kind of olives always remind me of going on holiday to Cyprus as we’d always get a bowl of them and my dad would eat them all as he was the only one who liked olives x
These would be perfect for Alfresco evenings in the garden with a bottle! Love that they’ve mixed fennel with them as well, great for our tummies x
I never would to like olives as a kid but now I can not get enough of them, love the simplicity of this recipe Jemma, looks yummy.
Olives are my favourite. I love them straight out the jar or to use in other ways in the kitchen. They’re so versatile!
I’m obsessed with olives as a little healthy fat filled snack at the moment. These look delicious – loving all the flavours.
I am not a big Olive fan but you make them sound delicious
I’m mega obsessed with olives but I find deli ones go off really fast. I’ll definitely be giving these a go. I’ll have to see if I can get hold of some fennel seeds next time I shop – I bet they taste amazing on olives. Can’t believe it’s a combo I’ve never tried.
