Is it me, or did spring just come and hit us all over the head this weekend in the UK?

The weather has been gorgeous and for the first time in like forever, I didn’t step out with my winter coat yesterday.  It was definitely a light blazer and wedges kind of day, yay!  Today I notices that the skies are crystal clear blue again and I’m really looking forward to a fabulous Sunday.  Life is good!

I’ve had another brilliant week of food again this week, just full of everything that I love:

It was a little bit chilly and cloudy at the start of the week so I‘ve been enjoying lots of porridge breakfast bowls in the morning to keep me warm.  This was organic oats made with unsweetened almond milk, cinnamon, mixed dried fruit and a chopped organic pink lady apple.

On brighter mornings I adopted a more summery breakfast of my Salted Peanut Butter Granola, baby figs and Greek yoghurt.  In fact baby figs have been a favourite of mine this week.  It’s so great that they are coming into season:

Staying hydrated has been a main focus for me this week, so I have been chugging coconut water again.  I have a post coming up about hydration coming up later next week, something that I have been struggling with recently.

This week I have been cooking up a storm in the kitchen and baked some wonderful double chocolate grain free muffins and made this wonderful oriental inspired salad that is packed full of vitamin C.  Both recipes will be appearing on the blog very soon.

Speaking of chocolate, I decided to finally try some of these dairy free chocolate buttons that I found in Sainsbury’s.  I have to say that they tasted really delicious, especially in this orange flavour.  The whole bag was munched through in one sitting, yum!

Some things are worth waiting out the week for and this pizza was so that!  I’d been wanting a pizza for dinner all week, but decided to hold out until Friday night.  It is all about healthy balance on this blog after all, thank goodness!

I’m really looking forward to this week as it full of exciting things, special meetings and making birthday plans, more on that soon.  In the meantime, I’m going to be enjoying the sunshine today perhaps with a walk or a bike ride.
