How adorable is this gingerbread muffin?  Diving into this and sipping on my chai latte made yesterday’s Christmas shopping trip extra special.  I love all of those warm spicy flavours at this time of year and it wouldn’t be the festive season for me without any delicious gingerbread.  Something tells me that I might be back for another one before Christmas arrives.

What I’ve Been Eating This Week

Whilst out shopping we stopped for lunch in a very busy M&S restaurant.  Normally I pick up a salad or sandwich from the fridges and rarely stop to have a sit-down meal there.  The butternut and grain salad jumped out at me from the menu and as soon as it arrived I knew I had made the best choice.

Colder mornings means it’s time to get the porridge and lots of toppings on standby.  I’ve been enjoying my porridge simply made with almond milk and a mashed banana and going crazy on the toppings.  This time, it was almonds, dried cranberries, desiccated coconut and pumpkin seeds.

Sorry about the rubbish picture, the mornings have been so dark this week – a food bloggers nightmare!  Rye bread is back on the menu this week and my favourite way to eat it has been with mashed avocado, bacon and fried eggs with those runny yolks, of course!

I’m not the biggest tea cake eater, to be honest, but I was totally won over by this one that I had at a play cafe with Aiden.  Play cafe’s are brilliant because you can enjoy your tea or coffee while your little ones go and play with all the toys, definitely worth checking out if you have any bambinos.

Chocolate is never too far from my lips and a very lovely friend treated me to this gorgeous box of chocolates. They’re just far too pretty to eat, well that thought lasted only for a few moments and I soon got stuck into these beauties.

Regular readers of the blog will know that I’m all about easy, fuss-free healthy cooking and this lunch was just that.  A baked sweet potato with refried beans, cream cheese, salsa and baby kale on the side, such a simple and tasty meal.

  • Monday – Hiking
  • Tuesday – Rest
  • Wednesday – Total Body Yoga with Adriene
  • Thursday – Rest
  • Friday – 40-minute walk and a 20-minute run
  • Saturday – Rest
  • Sunday – Strength training workout 

Yay! I actually have some moves to report this week.  Getting out of my workout rut has been a struggle but my motivation returned this week, albeit a little, I’m still proud of my workouts.  I’m taking things slowly and not forcing myself to workout for too long and only doing things that I enjoy.  Next week I’m hoping to pop to the gym and get to a spinning class for the first time in nearly 2 years!
