Happy Sunday!  Hope you are all having a beautiful weekend so far.  One of my oldest friends came to visit yesterday and it was so nice catching up with her and she got to meet my little man too. I made my Chicken & Rice Noodle Salad for lunch and we talked and gossiped the afternoon away. I was hoping that we could have eaten outside, but after a promising looking sunny morning with not a cloud in the sky it became grey and overcast by lunchtime.  It has felt very autumnal this week, but on the one day that I the sun was really shining I made the most of it and went for a lovely walk and took in the amazing views.  I always feel so blessed to live in such a beautiful part of the UK.

For lunches this week I’ve munched on this Wholegrain Greens and Beans Salad that I made a big batch of after our weekly shop arrived.  It’s full of lots of nourishing healthy stuff and it’s kept me going pretty much all week.  I recorded how to make this salad on what has become my new addiction, but more on that in a minute!

I was looking for a different Moroccan dish to make with some lamb that I had in the freezer instead of my Morrocan Lamb Tagine and found Mary Berry’s Harissa Spice Lamb With Cannellini Beans, which I cooked in about 30 minutes, instead of the 2 hours stated in the recipe. It came out really well, but I had to add some chilli flakes as it was a bit weak for our taste buds, we love chilli! I served it with some cous cous, rocket, natural yoghurt and pomegranate seeds.

Monday was a really long and busy day and I’m so grateful that you can now buy healthy convenience foods.  I had this Bol salad pot while on the road and it was pretty good.  I would definitely buy it again and try the other salad pots from the brand when I’m out and about again.

To add some sunshine back into my life on the autumnal and chillier mornings I’ve had big bowls of summer berries and mango for breakfast with lots of Greek yoghurt.   I felt a lot more summery after this!

I’ve made my Super Creamy Apple & Ginger Smoothie  a couple of times this week and the ginger kick has been lovely to warm my belly when it’s felt a bit chilly.  Adding some extra avocado to the mix made it even creamier than usual.

 A simple snack plate full of some of my favourite things was a really delicious and quick lunch, full with of brie, smoked salmon, apples and oat cakes. 

Now to my new addiction!  I’ve become a bit in love with Periscope, a live streaming app that’s just so much fun. Fingers crossed that summer isn’t over just yet, it barely feels like we’ve had one yet here in the UK.  I’m still remaining hopeful that an Indian Summer is on its way.  Although I love autumn and all the seasonal produce, celebrations and beautiful colours it brings I’m not quite ready to say goodbye to summer just yet.
