Happy Friday friends, hope your week has been good!  I’ve been really enjoying the cooler weather.  It’s still warm enough to be summer but far more comfortable that you are not sweating buckets with the slightest move.  I wish the clouds would disappear though!

This week I have very much been enjoying my salads for lunch and dinner.  I mentioned earlier this week that I have been feasting on the smoky chicken and roasted veggie salad all week at work. Well, I have also been enjoying:

Mixed leaves, red peppers, celery, tomatoes, boiled eggs and hummus

Spinach, cucumber, mozzarella cheese, tomatoes and Zest vegan pesto

I just love how easy salads are to just to throw together.

This watermelon and trail mix combo went down a treat for breakfast one morning.  I was in a rush and didn’t have time for much so I having the water melon already chopped in the fridge was a God send as are the small packs of trail mix that I received in my Nutribox.

I love it when my breakfasts resemble dessert.  I took one of my Frozen Strawberry and Lemon Cheesecakes and added some fresh raspberries, Greek yoghurt and honey. This was just divine!  Frozen desserts are definitely the way forward and I’ve got a few recipes up my sleeves for future blog posts.

Stir fries are always one of my go to dinners just because they are so easy to make.  I had a major craving for one last night so I just went with it. In to the wok went French beans, red peppers and broccoli with some king prawns, roasted pork and chai sui sauce, yummy!

More often or not, there is always a snack plate somewhere in my week.  The other night I hade some fresh strawberries, cinder toffee popcorn and a strawberry and chocolate Frank bar as part of my snack fest.  A review on those Frank bars will be coming soon.

Over this weekend I’m hoping to take of some blog maintence as I think I have neglected some area of my blog, such as updating my recipe page. Also, I want to add a few extra plug-ins to make the blog more reader friendly.  Lover reader Abby suggested on a recent recipe post of including  “link in your blog to a printable version of the recipe.” I am very keen to keep my blog accessible to my readers so I am always  open to suggestions. If you have know of any useful plug-ins then I will be happy to incorporate them if my technical skills allow.
