Dates, particularly Medjool dates are my current snack time obsession. They make great quick and easy snacks to quench any sweet cravings. At the moment, I’m loving mine smeared with almond butter or that very addictive Biscoff spread that is hidden in the darkest depths of my larder. On the odd occasion, I also like them stuffed with goat’s cheese or cream cheese too.
Since I love Medjool dates so much they’ve become a staple in my weekly shop as are bananas, which I eat a lot, but always have a couple left over at the end of the week. I hate mushy bananas when the skin goes all black and they become over sweet. Food waste is one of my pet hates and I always try to re-invent leftovers and make sure every scrap of food is used until the next weekly shop, even those mushy bananas that I hate so much. Rather than baking a banana bread loaf, I’ve been using the over-ripe bananas to make a sweet, but healthy afternoon treat in the form of a smoothie.

- 1 banana
- 4 pitted Medjool dates
- 1/4 cup cashew nuts
- 1/4 cup porridge oats
- 2 cups unsweetened almond milk
- 1 cup filtered water
- 1 tbsp coconut butter or coconut oil

Pour all of the ingredients into a blender and blitz until smooth.

Serve in your favourite glass with a retro straw and enjoy!
I’ve been going crazy over these smoothies on a warm afternoon. When made with ice-cold milk and filtered water they are the perfect way to cool down, but also get that sweet hit that we sometimes need at 3 pm in the afternoon. The banana and cashew nuts make this smoothie incredibly cream so the water filtered using a BRITA filter jug* is just to loosen the smoothie a little, having said that there is no harm done if you prefer to get stuck in with your spoon – I know I would!
I must warn you that this is highly addictive and once one has been consumed you’re going to want another right away! Seriously, this flavour combination really works and if you love your dates and have some bananas that need using up you should get your blender out, stat!

The creaminess of this smoothie looks insanely good! They do a similar smoothie to this at my old work with the addition of maca powder. It is like liquid gold. Seriously addictive stuff!
