Happy Sunday you lovely lot!  Oh, my week has been filled with lots of awesome stuff and I’m buzzing. It’s been one of those week’s where everything slowly starts falling into place and I’ve had some exciting opportunities swing my way and so much creative inspiration too.  One of my talented and loveliest friends sent this homemade card through the door, which I think is so wonderful.  I’m going to frame it and hang it on our currently bare walls.  We went window shopping for home furnishings earlier in the week and I cannot wait to get started.  My goal is to get our new home looking amazing before Christmas, so I haven’t really got that long!

WHAT I’VE BEEN EATING THIS WEEK 

pumpkin porridge

Comfort food has been my thing this week and I’ve been all over pumpkin porridge.  I think I had this same bowl on repeat at least 3 times and I never got bored. I’m going to have to stock up on some Libby’s pumpkin since depleting my stash I know I’m going to be using lots of it over the next couple of months.  Lots of cinnamon, maple syrup and mixed nuts made this breakfast extra special.

One quick and easy meal that I don’t have very often, but love it all the same is toast.  We’re not a house of massive bread eaters, but I am partial to sourdough toast topped with mashed avocado, always a winner!

Figs, how you tempt me every time I see you in the supermarket.  I seriously cannot get enough of them at the moment so sorry if you’re bored with seeing them in every other pos, but while they’re in-season their here to stay.  This salad with parma ham, brie, figs, walnuts, honey and mixed leaves included so many of my favourite things to eat.  It was like Christmas at lunch time, yum!

Another speedy lunch favourite of mine is anything on top of a baked sweet potato.  Fried eggs with the runniest yolks (you all know how I love those runny egg yolks!) and some mixed leaves sounds boring, but it really hit the spot.

Thai green curry

Curry has to go down as one of my favourite meals.  I actually find them comforting and it’s such an all seasons meal that I don’t feel inappropriate eating it in the summer, unlike a heavy stew or casserole. Thai green curry is one of my go-to’s and this time I had it packed full of roasted vegetables and the juiciest king prawns…so good!

Yesterday, I had a desperate need to bake something and with 2 ripe bananas that needed using fast it would have been rude not to whip up some banana bread.  I tried to get Aiden involved and he really enjoyed watching me sing silly songs to him and banging the mixing bowl with a spoon, although he got bored towards the end.  I can’t wait until he’s older so he can bake with me properly.  I’m looking forward to another slice of our bake today with another mug of chai tea.

The winning bake will go on show in Westfield, London, the weekend of Stir up Sunday (20th-22nd November) a slice of cake will be sold for a £1 donation. I really love that feeling of excitement that have a creative moment brings and I’m now in the process of planning an e-course, which I can’t wait to get my teeth into after I’ve launched the E-Book in a few weeks time.  We have a big furniture delivery from Ikea arriving this week, some new opportunities have come my way and it’s also Alfie’s birthday too, so there are lots of things to be excited about at the moment.
