Happy Sunday!  Hope you guys are all having a wonderful weekend.  We’re having pretty decent one over here which so far has involved an epic shopping trip in the Next sale to stock up on cute baby clothes.  The place was just manic and they had cleared through so much stock before we got there mid-morning.  We also headed to GAP and I scored a gorgeous maxi dress that has navy nautical stripes on it, not that I needed any more stripes in my wardrobe, but I did want a nautical maxi dress because I stretched my last one during pregnancy.  We’re heading to my friend’s baby’s christening today and it sounds like it’s shaping up to be a beautiful weekend, made even more beautiful with the gorgeous flowers that have bloomed in our garden, so I’m looking forward to spending a sunny afternoon in the sunshine too.

I’ve been eating some super tasty meals this week. I actually made these red pepper, spinach and cheese egg muffins for Aiden to eat for lunch, but I ended up sneaking a couple for myself as well, I’m sure that he didn’t mind! I do love that we can practically eat the same things at meal times now and he really loves his egg muffins.

My smoothie obsession is still going strong and I’ve developed two new recipes this week for clients and this green summery one is a winner.  It almost tastes like dessert!

There have been a couple of mornings this week where it’s been a little grey and I’ve fancied porridge, but not a warm breakfast if that makes any sense?  Instead, I made overnight oats by soaking my porridge oats in almond milk overnight with some frozen cherries.  In the morning, the oats swell up and become creamy and then you can go mad on the toppings, which for this bowl included the new in my life, coconut Chocshot, pumpkin seeds, goji berries, full-fat Greek yoghurt and shredded coconut.

Of course,  I’m still dreaming about this salted caramel brownie that I bought as a treat after my 5K Race for Life event.  I’ve got a recipe in mind to recreate this for the blog so watch this space.

I treated myself to my favourite falafel salad from Pret the other day. Everything in this salad is just delicious, but I wish that they gave you more than 3 falafels or maybe that’s me just being greedy. 😉

I made the huge mistake of picking up a jar of Biscoff spread yesterday, whilst on the hunt for some ingredients.  It’s like crack!  Yesterday after our mammoth shopping trip I stuffed some into some medjool dates and could have easily gone in with my spoon for more.  Needless to say the jar is carefully hidden in the depths of my larder, never to be seen for a while, well maybe a couple of days.

Alfie came home from work with this bar of chilli dark chocolate the other night, he knows me so well!  It’s not my usual go-to Lindt bar, hello caramel sea salt dark chocolate, but it’s equally delicious.  The chilli heat really has a kick at the end and gives the chocolate some oomph.

Leftovers are the best for quick and healthy lunches.  This salad was made up of leftover roast chicken from Sunday lunch, leftover lentils, steamed broccoli and feta cheese.  I ended up adding a big dollop of hummus on top for good measure and my belly was one happy customer afterwards. 

I’m really looking forward to the christening later, it should be a lovely day.  We’re just finalising a few things for Aiden’s christening like the food, which is obviously high on my priority list and I cannot wait to choose from the caterers menu.  Hope you all have a beautiful Sunday and a great week ahead planned – the weekend always seems to just fly by!
