Black Bean Salsa 1 copy

Always buy salsa from the shop?  Never thought about making your own because you thought it was too hard and time-consuming?  Well, I’m here to prove you wrong.   I thought exactly the same thing and always thought that all that chopping was far too draining and homemade salsa could never taste as good as a shop bought version.  This black bean salsa is not only the easiest salsa to throw together, it’s also pretty delicious too.

I love adding salsa onto fully loaded nachos, vegetarian chilli, on my tacos and enchiladas and even on to my salads instead of a dressing.  I’m not one for those blended salsas and I prefer the chunky variety, where you can taste all the ingredients and see all the vibrant colours of the food.  

Black Bean Salsa
A budget-friendly black bean salsa full of vibrant and delicious flavours!

Ingredients
  • 260 g /1.5 cups sweetcorn in water
  • 230 g /1 cup black beans
  • 1 red pepper diced
  • 2 large tomatoes deseeded and diced
  • 1/2 red onion diced
  • 1 tsp dried chilli flakes
  • 1/2 tsp cumin
  • juice of 1 lime
  • 4 tbsp chopped coriander
  • salt and pepper to taste
Instructions
  1. Pour black beans, vegetables in a bowl and stir through the chilli flakes, cumin and lime juice.
  2. Roughly chop the coriander, stir through the salsa.
  3. Season the salsa to taste.
  4. Serve and enjoy!

Seriously, this couldn’t be any easier to throw together. OK, so now I’m assuming that you have an image in your head of me randomly tossing ingredients into a bowl standing 5 metres away.  Nope, but to make this salsa you literally only need to chop, pour and mix – how simple is that?

This protein-packed salsa is really budget friendly too, which for me is really important at the moment as I’m trying to cut the cost of our weekly grocery shop.  Plus, there is the added benefit of knowing exactly what is going into your salsa and being in control of the ingredients. In all cases, homemade food is healthier than store-bought, free from preservatives and high sugar levels.

Full of fresh tomato, sweet red pepper and sweet corn, hearty black beans, and zesty lime this salsa really gives the most boring of meals a lift.  Look at all that colour, I’m definitely a salsa making convert –  are you?
