Hurrah! We have made it through another week lovely people! There were times this week when the weekend seemed to be out of my grasp. It has been so busy in the office and very much heads down in our work. There has been barely enough time to come up for air. Alas, the weekend is here and I think all I’m going to be doing is sleeping…rock and roil eh?!
I’ve been loving my Macadamia and Coconut Protein Truffles for a protein kick this week. Check out the recipe if you haven’t already, so easy to make and really delicious! I had three of these one morning this week along with a fantastic strawberry and banana protein smoothie, fab!
Perfectly autumn. This was a bowl of oats made with water and unsweetened almond milk, a chopped apple, plenty of cinnamon and ginger coconom coconut sugar. This was great on a dark, wet mid-week morning.
Lunch highlights this week include this salad:
I made this on Sunday night and it has served me well for lunches at work. The bean salad was made using cannellini beans, feta (love always!), black olives, tomatoes and cucumber, spring onions and chopped basil. I did my usual thing of buying a bag of salad from a nearby shop and an incredible lunch was born. I’ve been eating this at my desk because as I mentioned earlier time has been precious this week. Working and eating lunch at the same time, multi-tasking at it’s best…ha!
I did pop out with my work colleagues one day though and headed to an organic health food shop that also serves food. I picked up a sour dough toasted sandwich stuffed with baked salmon, spinach, cream cheese and cooked onions. Oh my, this was gorgeous!
Dinners have been just as good. I made a huge casserole pot full of chilli made using pork mince. I added a baked sweet potato topped with butter and lots of steamed broccoli. This is exactly the type of food I love at the moment and that’s voluminous eating right there. Works for me!
Last night I made a yummy cheese, spinach and mushroom 3 egg omelet served with ,mixed leaves and roasted peppers. I’m still loving my eggs, addicted! The one thing about the autumn that I don’t enjoy is the lack of day light in the evening, artificial light makes for poor photos, sorry guys.
This dessert was just stunning. I fried some peaches and figs in a frying pan and added them to some full fat Greek yoghurt with maple syrup and peanut butter, heavenly.
This weekend we are heading to Ikea to pick up a desk. We are setting up a home office in our guest room as we both work from home sometimes and it would be nice to have a designated work space. I’ve been having lots of fun looking for home office inspiration on my Pinterest. I’m in love with that vintage and retro style!
Exciting! I’m really looking forward to getting stuck in to this new home project and creating the perfect work space for both of us.

What are your favourite things to have on/in your desk? It’s imperative that I have a snack drawer and some of my favourite things like pretty postcards etc. to make it feel more personal.









I’ve had one of those weeks as well, just never stopped! I love my little home office, or desk should I say 😉 I sometimes think I’d like a separate room for it but I have grown to like being in the living room and since I’ve made it so pretty I think it works well 🙂
I can’t wait to get started on it! I would love to make it all pretty and vintage but it’s for Alfie’s benefit too so there will have to be that happy medium 🙂 Hope you manage to have a restful weekend!

I love a trip to Ikea! I don’t have a desk at home, I just clear things off our dining room table but that suits me fine as I usually need a lot of space with all the books etc.
This year my classroom has a desk (have never had that before) and I must say I love having one instead of having to sit at the child size tables. Although the personal things on my desk are hand sanitiser and hand cream!
I normally use my dining table too but think it will be nice having something in our guest room so that I don’t get distracted. Hand cream is a must for me too! 🙂
I have a home office as my job is now based from home. James built me a gorgeous desk from ikea, I absolutely love it!
That peach, fig, yog, maple syrup and pb looks and sounds incredibly delicious!
