One very lazy and pre-wedding Sunday morning I woke up and decided to make the time to make pancakes- it had been so long. Looking outside at the carpet of orange and burnished leaves in my garden from our tree there was only one thing that came to mind, autumn inspired pancakes.
Pancakes are so adaptable to different seasons, simply by changing up the ingredients. Since it’s autumn and I am in love with this season (if you can’t tell already!) cinnamon had to be a main feature in these pancakes and then apples and dates sprang to mind and these delicious beauties were born.
The use of wholemeal flour also makes these super filling, giving them plenty of staying power. Just what you want from a lazy Sunday breakfast, so then you can get down to watching Sex and the City on repeat without having to worry about getting up for snacks. =)
Ingredients (makes 8 pancakes)
1.5 cups of wholemeal flour
1 cup of almond milk
1 tsp of baking powder
1 tsp of cinnamon
1 sweet apple diced
2 tbsp of pitted dates chopped
Simply weigh out the ingredients and beat the flour, baking powder, cinnamon and almond milk together until a smooth batter forms. Added the diced apple and dates and stir through.
To cook take tablespoon sized portions and drop the batter into a hot pan lightly coated with oil. The batter will puff up and holes will appear on the surface after a few minutes. At this point flip the pancakes over and cook on the other side for a few minutes more until golden brown.
Serve and devour!
For me pancakes are the ultimate lazy breakfast. Alfie loved these too with local honey and Greek yoghurt and scoffed down an entire plate full, nice to know that he enjoys my cooking. =)
