Phew!  I’m so glad that I have found some time to myself.  It has been really busy at uni with a zillion things going on at once that I’ve had no choice, but to work at lightening speed and eat pretty much whatever fell in to my hands.

Although slightly rushed my eats were still just as tasty of course…

Monday’s breakfast was a yummy bowl of oats made with a mashed banana, 1 tbsp of carob powder, 1/2 cup of oats, 1 cup of oat milk, 2 cups of water, 2 tsps of maple syrup and topped with fresh strawberries and a creamy white chocolate wonderful sauce.

Lunches on both days have been leftovers from dinner the night before.  Yesterday I had the leftovers of the mixed vegetable and lentil stew that I made for dinner on Monday night with steamed veggies.  This was also the perfect fuel for my usual Monday 1 hour cardio workout.

Last nights dinner and todayโ€™s lunch was a mammoth stir fry of mixed veggies that included cauliflower, broccoli, courgettes, aubergine, carrots, peppers, sugar snap peas and mushrooms.  I also added some pressed tofu that I had marinated in soy sauce, oyster sauce, ume plum vinegar and some yellow ginger and chilli sauceโ€ฆso amazingly delicious! ๐Ÿ™‚  

I was definitely getting into the Wimbledon spirit with more fresh strawberries for dessert.  This time I added blueberries and oat milk and a few squares of Green & lack’s Maya Gold that I found at the back of the cupboard at the weekend.  As a food blogger it really is amazing what delicious treats you will find at the back of my cupboards.  The Maya Gold bar has been the best find yet! ๐Ÿ™‚

After this morningโ€™s yoga session, abs and core and upper body workout I refuelled with  a yummy yoghurt bowl made from Rachelโ€™s organic yoghurt, Apple and Blackberry Compote, Homemade Mixed Muesli and a few dates. 

Tonightโ€™s dinner was a huge plate of salad topped with some Cauldronโ€™s falafels- I love these things!

The salad included mixed salad leaves, edamame beans, half an avocado, sprouted beans, tomatoes, a shredded whole meal wrap and a sweet chillli dressing.  This tasted amazing.  I really do enjoy a huge plate of fresh ingredients, the fact that the sun finally made an appearance made this taste even better too. 

For dessert I needed a hit of cookies and cream protein ice cream with some strawberries, obviously! ๐Ÿ™‚  I think Iโ€™m obsessed with fresh strawberries at the moment.
