Hey lovelies! I hope you all had an amazing weekend. I did absolutely nothing yesterday and enjoyed every minute of it. Lots of movies were watched and some baking ensued, all of which I will be sharing with you later this week. After all of that rest the fact that it was Monday morning really didnโt faze me at all. I feel very refreshed and ready to tackle the week head on! ๐
Over the weekend I made and enjoyed some pretty amazing eats:
Carrot cake overnight oats: 1/2 cup oats, 2 cups of water, 2 tbsps of chia seeds, 1 grated carrot, dates, 1 tsp of cinnamon, 1/2 tsp of ginger and a drizzle of honey left overnight. In the morning I warmed the oats in the microwave and stirred in 1/2 cup of soya milk and topped the oats with homemade cashew nut butter.
A lovely croissant with a bowl of chopped figs,strawberries, and persimmon topped with plain soya yoghurt.
An old favouriteโฆFruity Mixed Whole Grain Salad.
Scrambled tofu with aubergine, green pepper, pineapple, cauliflower, onion, garlic and ginger in a sweet chilli sauce.
Butternut Squash Coconut Curry made using red kabocha squash (yum!) served with some peshwari naan bread. Sorry for the awful evening pic!
Another nasty evening shot but this tasted gorgeous. It included plain soya yoghurt mixed with peanut flour, fresh strawberries and the last of my Lindt Hazelnut Deluxe chocolate. I wanted to cry over the last few squares of chocolate, but I think I did them justice with this dessert.
This month is just whizzing by. I canโt believe that we are already halfway through the month already. Itโs going so fast that I havenโt even started to think about organising myself for my trip to the States next month i.e. places to visit, where to eat, where to shop etc.

Iโm so freakinโ excited for Floridaโฆeeeeeek! I The fact that we are going for Thanks Giving has got me even more excited as Iโve always loved everything that it represents and cannot wait to experience it. We may also be heading to NYC too as we also have family there. My dad is determined to drive up- 19 hours people! I canโt believe that it will take that long to visit a city that is in the same country. America is monster huggggggggggggggggge compared to our sweet little green island.
Ok I think Iโve diverged a little too much eh? What I wanted to ask is where should I go? My dad has travelled to Florida a before so that part of the trip is all about me and I have no idea where to start. Obviously Whole Foods and Trader Joes are high on the priority list to shop. And Iโm most certainly going to be bringing back some, PB&Co, Justinโs nut butters, Spirutein, Amazing Grass powders, Lara bars, Cliff bars, puffins and Kashi cereal.
Iโm fearing the extra luggage charges on the return journey home already. ๐

Man I was trying to pick what would be my favorite of those eats but its too hard! I think I’d want the curry dish… because I recently decided I like curry a lot! haha

Yay so exciting!!!!!!! I love going to the USA and to Florida ๐ There is a big Wholefoods in Orlando ๐ The gulf coast is so beautiful- and also you could go to St Augustine in Florida on your drive up (or down?) from/to NYC- it is north florida and loads of history there. ๐ That drive is crazy! Also this summer CHarleton and Savannah (esp Savannah) were so pretty and also on the way up ๐

My best friend’s sister lived near LA for a few years so we went there, then on a road trip to Las Vegas, the Grand Canyon, Phoenix and San Diego – best holiday ever!

I’m so jealous of your trip! I love the idea of Thanksgiving – it’s a shame we don’t have much like that in this country. My American friend hosted a thanksgiving dinner party last year and I remember there being amazing sweet potato pie, yum.
All your eats in this post look fab, especially the scrambled tofu and butternut curry. What kind of tofu do you use? Also where did you buy your persimmons? I’ve been looking in every supermarket I’ve been in to lately but nowhere here has them ๐
I can’t wait for my trip!! ๐ I used fim silken tofu by Mori-Nu. The persimmons are lovely. I got them from my market. I haven’t seen them in the shops for a while either.
I am SO excited for you, and super jealous at the same time! I went to Cali last autumn to visit family and friends and I just loved it there… I didn’t want to leave at all!
