I’m a peanut butter lover, I’ll admit that! You can get almond butter, cashew butter, macadamia nut butter, damn, you can even get pumpkin seed butter these days; however, out of them all, I always come back to the classic. Good ole straight up peanut butter. It’s so versatile and last week I tested it as a base for the sauce for my noodle salad that I made for lunch.
This is definitely how I love to cut carbs in my ‘diet.’ Way to often carbohydrates are given a bad rap, but like all foods, they have a place as part of a balanced diet and are a mainstay for many dishes. Yes, there are some mealtimes when I like to bulk up on the protein and veggies and feel perfectly satisfied, but then there are times where nothing will do except a dose of carbohydrate goodness.

A satisfying and nourishing noodle salad idea dressed with a creamy peanut butter and sesame sauce - it's full of flavour and super speedy to make too!
- 2 tbsp smooth peanut butter
- 2 tbsp toasted sesame oil
- 2 tbsp dark soy sauce
- 2 tbsp Comvita Manuka Honey
- 1 garlic clove grated
- 1/2 inch fresh ginger grated
- juice of one lime
- 300 g precooked egg noodles
- 1/2 red and yellow peppers sliced
- 1 carrot finely sliced
- handful of tenderstem broccoli
- 4 spring onions sliced
- 3 tbsp roasted peanuts
- 3 tbsp sesame seeds

Pour all the ingredients into a bowl and stir together until well combined.

Pour everything into a large bowl and pour over the peanut dressing.

Using two forks, toss everything together so everything is well covered with the dressing.

Serve and enjoy!
Making my own dressings isn’t something that I do very often, usually, a dollop of hummus is plenty for my salads. Alas, I’m not sure hummus would sit well on a big bowl of noodles and veggies. Admittedly, dressings are simple and healthier to make and I really love how this creamy peanut dressing clings to the noodles and adds so much flavour.
In this recipe, I used Comvita Manuka Honey to help balance out the gentle saltiness from the soy sauce. Manuka honey originates from New Zealand and is becoming very popular in the wellness world for its wonderful health properties. I always like to have a jar of honey in the cupboard and use it regularly for its natural sweetness. It’s great drizzled on yoghurt, in bakes, and cooking too.

I love noodle salads and really should make them more, normally we only eat noodles as part of a stir fry, but enjoying them as part of a salad is lovely too. For this recipe, I’ve kept things vegetarian and made use of some beautiful fresh vegetables, but you could easily add some chicken or king prawns too.

I’m a massive fan of both PB and honey. I use honey in my coffee instead of sugar and PB goes with so much (as well as being good on a teaspoon ?)

Loved this recipe!!! The dressing was perfect on rice noodles with veggies. Next I’m going to try it on a salad with grilled chicktrn, edamame, roasted red pepper, cilantro and a chili vinaigrette (just like paneras Thai chicken salad).

I am not a fan of peanut butter on its own, but I do use it in cooking and this recipe is something I would love to use it in, I also love manuka honey and find it works very well in dishes like this x
