Now you know that I love experimenting with my low carb alternatives to mix into my every day for when I’m fancying something a bit lighter to serve with my curry or pasta sauce.  Cauliflower rice has become a low-carb favourite of mine, all you need is a box grater to create it and it’s fantastic at soaking up flavours.  The golden hue of the cauliflower rice that I’m sharing with you today comes from what is apparently the most expensive spice in the world, saffron.

Saffron can be found growing in Spain and is used a lot in their cooking, particularly their most popular dish, paella.  It really transforms, let’s face it, otherwise bland looking cauliflower rice; such a simple way to pep it up! It’s like a ray of sunshine on your plate on a grey winter day.  I actually felt like booking a holiday to the beautiful Spanish coast while I was eating this. 

RECIPE

  • 1 head of cauliflower
  • 1 onion, diced
  • 5 strands of saffron
  • 125ml of water
  • Coconut oil for frying
 
  1. Firstly, grate the cauliflower using a box grater or food processor and set aside.
  2. Place the saffron in the water and allow it to steep.
  3. In a large saucepan, melt some coconut oil and fry off the onion until translucent and tender.
  4. Add the cauliflower rice to the pan and the saffron infused water.
  5. Stir and coat the rice so that it takes on the mild saffron hue.
  6. Lower the heat and place the saucepan lid on top and allow the cauliflower rice to steam for 5 minutes.
  7. Season to taste and serve.

What better to serve with my saffron cauliflower rice than a Spanish Chicken & Bean Stew created by Weight Watchers.  It’s made only using ingredients that you would find in your kitchen and is high in protein because of the inclusion of butter beans, black turtle beans and chickpeas in the gazpacho style sauce.

What I love about this meal and others in the Weight Watchers range, is that it’s a shift from their usual counting system.  It’s a fantastic, less rigid approach to weight loss or adopting a healthier lifestyle, so ticks a lot of boxes for me and makes things easier. The Weight Watchers meals are based on lean protein and vegetables, which is a great mix and can be eaten freely until you are satisfied.

A lot of convenience meals are full of artificial sweeteners, preservatives and high in sugar, which these meals are not. With a super active toddler, there are times when I don’t have the energy to cook, so it’s nice to know that I can have something healthy already cooked and ready to go.
