Walnut Fudge Energy Balls - a healthier indulgent afternoon pick me up!

Get ahead and make a batch of these healthy energy balls to keep you going through a busy week.  The medjool dates give these walnut fudge energy balls a naturally sweetness, but also a gooey fudgy texture, making these a fantastic afternoon pick-me-up.  They feel indulgent even though all the ingredients are wholesome and couldn’t be any easier to whip up.

Last week was the start of my Healthy Mind & Body Reset Challenge and one of the things that I’ve talked to the wonderful ladies taking part about is getting ahead for a healthier week.  Leading a healthier lifestyle doesn’t have to be difficult, however, it may take some forward planning and organisation to make it easier.  This may include meal planning, spending some your time with your planner to organise your week or having a massive cooking session on a Sunday afternoon to fill the fridge and freezer.

Get ahead and make a batch of these healthy snack balls to keep you going through a busy week.

Ingredients
  • 8 medjool dates
  • 15 walnut halves
  • 6 tbsp rolled oats
  • 1.5 tbsp unsweetened cocoa powder or raw cacao powder
  • 2 tsp ground cinnamon
Instructions
  1. Put all of the ingredients into a blender and blitz until a breadcrumb-like texture forms.
  2. Portion the mixture into 8-10 and roll into balls.
  3. These are ready to eat straight away or you can store them in the fridge.

Spending an hour in the kitchen every Sunday is one of my favourite things to do to get ahead.  It’s one thing that I love pottering about the kitchen anyway, but I know batch cooking a few meals, prepping some vegetables and making some healthy snacks is really going to help me stay on track, especially when I know I’m going to be busy.  It just makes life a lot less stressful that I’ve already got some balanced meals and snacks already and waiting for me.

I love eating these energy balls with my afternoon cup of tea or hot chocolate, depending on how I’m feeling.  The walnuts give the snack balls texture and of course, the chocolate flavour makes these feel more indulgent than they are and that cinnamon twist at the end really works.  With very little ingredients these are so simple to make and really budget friendly too.
