Change up your lunch time sandwich and spice things up with this sweet and salty combination. This has become one of my favourite lunches, stuffed full of halloumi cheese, cool and creamy hummus, crunchy grated carrot and sweet chilli sauce.
The one thing that I love about food is how it can bring people together. Cooking is one of my life joys and a big part of that is sharing it with the people who I love dearest. It doesn’t have to be anything fancy or over the top, sometimes the simplest stripped back meals are the best.
At school, university, work and since becoming a mum I have met some wonderful friends, who my life or certain moments wouldn’t have been the same without. We may not see each other as often as we would like and perhaps not talk on the phone as much as we should, but I can always be sure that when we do nothing would have changed between us. In fact, this week I’ve had two lovely lunch dates with a different set of friends that entered my life at different periods. Food really does bring people together and over lunch, we talked, laughed and reminisced like we’d never spent any time apart.

- 1 Mission Deli Wrap
- 3 slices halloumi cheese
- 1 grated carrot
- 2 tbsp plain hummus
- 2 tbsp sweet chilli sauce
- 2 tbsp fresh coriander
- Handful of salad leaves

Slice and fry the halloumi cheese in a little oil and brown on each side. Brush the cheese slices with some sweet chilli sauce and set aside.

Spread the hummus all over the wrap and assemble the rest of the ingredients in the centre of the wrap in a long line.

Tuck in the ends of the wrap and roll.

Slice in two halves before eating.
I share some of the best memories with my friends over food, it’s funny how it can remind you of specific moments in your life, just like my Mushroom & Halloumi Sandwich does for me. This is why today I’m sharing one of my favourite lunches that I’ve eaten recently and one that I hope that sometime in the near future I will share with my friends, who are also massive halloumi cheese fans like me.
I used wraps by Mission Deli to create this recipe, who have turned its Original packs pink for the month of October in support of Breast Cancer Awareness Month. To show their support they are also donating £50,000 to Breast Cancer Care to help those who have been touched by this condition.
In research carried out to support the Pinktober campaign, over half of the women (51%) think they couldn’t get through the difficult times in life without the support of friends. When experiencing difficult times, 76% simply want a friend to listen. This is something that I and I think all of us can relate to. There are always moments where we just need a special person in our lives to talk about our problems with. Difficult times can feel easier knowing that you have someone there to support you.

With these special people I’ve formed strong bonds and will always have time for and be there for as they have always been for me. I’m so grateful to be surrounded by such a supportive bunch of friends and the camaraderie that we have with each other is second to none. So, my dearest friends I dedicate this post and recipe to you as a token of our friendship and a reminder that I will always be here for you in times of joy and in times of trouble.
