This lighter version of everyone’s favourite coleslaw recipe is the perfect accompaniment to pack in all of your picnics, to serve at your BBQ’s and as a salad topping. Loaded with lots of crunch and texture from the raw vegetables and seeds there is also the added sweetness from the apple, making this one of my favourite coleslaw recipes yet!
Coleslaw is one of those things that I love, but always consider a treat because most shop bought versions tend to be laden with heavy mayonnaise. In these instances, I prefer to make my own version as I’m in total control of the ingredients and the quantities used in the recipe. Generally, making your own homemade versions are not only healthier but also cheaper, like this No Mayo Apple Coleslaw that I’m sharing with you all today.

- 250 g /2 cups grated or spiralised cucumber
- 250 g /2 cups grated or spiralised carrot
- 150 g /1 cup edamame beans
- 50 g /1/2 cup mixed seeds
- 2 granny smith apples finely sliced
- 1 red onion finely sliced
- 200 g /1 cup full-fat Greek yoghurt
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1.5 tbsp honey
- 2 tbsp tahini
- Salt and pepper to taste

In a bowl, mix together the lemon juice, Greek yoghurt, honey, tahini, salt and pepper until well combined. Set aside.

Mix all the vegetables, apple and seeds together in separate bowl before pouring over the sauce.

Toss the coleslaw so that everything becomes coated with the sauce.

Serve and enjoy!
We recently got a proper picnic basket complete with cutlery and plates, all very grown up! I love packing it and going on family day trips (normally to a National Trust gem) with all of our favourite foods for a feast in the sunshine – well, when the weather decided to cooperate that is. One of the foods that we like to put in our picnic basket are the quiches by Higgidy and I love their new Little Ham Hock and Petit Pois Quiches that are easy to pack for a picnic.
Apple and pork are a match made in foodie heaven, so it was a no-brainer to serve the apple slaw with these quiches, lovely either hot or cold. I enjoy how bright and summery this coleslaw looks with all of those gorgeous vegetables. The fact that it contains no mayonnaise means that it’s lighter than traditional recipes, perfect if you’re looking to eat a little healthier this summer.

We always add some apple to our coleslaw for a little extra added crunch, but I love that you have put edamame in it too for some protein.

This version of coleslaw sounds a million times better than mayo ones! I love the added apple and seeds. Perfect with a Higgidy Pie – I love their sweet potato and feta pie.
I have yet to try the sweet potato and feta pie, such a great combo! The seeds and apple do give it a lovely crunch.
This looks SO GOOD! I love slaws, but mayonnaise can be quite heavy at times, so using Greek Yoghurt instead is a much healthier and tastier option!

The simple classics always work for me at a picnic; mini sausages, cold cuts, cut buttered pieces of baguette. I personally don’t eat coleslaw but my sister is a big fan and she loves baking and at home cooking so she will be all over this recipe

I always use Greek yogurt in my coleslaw and potato salad – it works just as well as mayo, and is so much lighter! Love the idea of adding edamame. And I’m a huge fan of Higgidy, their quiches are the best!
