A fresh and nutritious dinner ready in 10-minutes with sweet honey balanced with a hint of fiery chilli and served with zoodles – it’s quicker than ordering a takeaway. Made with really simple ingredients, but packed full of flavour!
Instead of noodles, this recipe uses courgette noodles or as I like to call them zoodles, which means there’s an extra portion of vegetables and it feels less heavy on your stomach compared to something like egg noodles. They’re one of my favourite low carb substitutes if I’m not wanting a heavy meal for dinner and they are great at soaking up sauce and flavours. If you don’t have a spiraliser you can simply use a speed peeler to make pretty ribbons instead.

- 1 tbsp coconut oil
- 2 garlic cloves , minced
- 1 thumb size piece of ginger , grated
- 2 tbsp honey
- 2 tbsp dark soy sauce
- 1 red chilli , sliced (deseed if preferred)
- 2 cups Iceland jumbo prawns
- 2 cups Iceland baby corn and sugar snap peas
- 1 cup Iceland quick cook sliced mixed peppers
- 2 courgettes , spiralised

Heat the coconut oil in a large pan or wok.

Pour in the frozen baby corn and sugar snap peas and stir in the ginger, garlic and red chilli and cook for 3 minutes.

Add in the peppers, prawns, honey, soy sauce and cook for a further 5 minutes.

Next add the zoodles into the pan and mix through so everything is evenly distributed. Cook for a further 2 minutes, making sure the prawns are cooked through.

Serve and enjoy.
Having a well-stocked freezer means that you can whip up a plethora of healthy meals in almost minutes like this recipe that I’m sharing today as part of Iceland’s #PowerofFrozen campaign. Minimal chopping was required because I used frozen vegetables from Iceland that were already prepared. A lot of people can be put off by frozen vegetables, however, I love them! They’re such great quality and have a high concentration of nutrients because they’re frozen as soon as their picked. Also, it’s nice knowing that I’ve got a freezer brimming with veggies when the cupboards and fridge are bare.
The frozen prawns are so juicy and cook in almost minutes. Of course, if prawns aren’t your jam then you can swap them out for chicken, beef, pork, tofu or seitan, however, this will obviously affect the cooking times. Whatever you decide to add to your bowl of zoodles, it will still taste delicious because the mix of vegetables and balance of the honey, chilli, ginger and soy really help make this dish.

I really need to try courgette noodles, I am trying to eat as little carbs as possible and this recipe sounds perfect. It looks delicious too. I also prefer frozen vegetables – they last longer and are so much easier than preparing fresh veg, although we do have fresh sometimes! Thank you for sharing.
Courgette noodles are a fantastic way to get more veggies into your meals. They’re fun to eat, taste great and soak up all the sauce like regular noodles too. π

Yes, they don’t need cooking for too long. They’re really yummy in stir fries when you’re wanting to get more veggies into your dinner.
Yummy! This is the kind of stir-fry that I would throw together except I’ve not tried courgette noodles- will be giving those a go! Totally agree about frozen veg! I’ve only recently discovered how good it is and always have a stash in the freezer. xx
You could use regular noodles instead if you’re not a fan of courgettes. Frozen veg is always fab to keep at home for when you’re out of fresh veg.
We are eating a lot of zoodles at the moment, but mixing them in with regular noodles too to keep up with the carbs. I love chilli prawns too π
I do the exact same thing for the hubby and little dude so they don’t miss the carbs, but get an extra veggie fix too. You can’t even tell that the zoodles are in there. π

I haven’t got the old spiraliser out in yonks, mainly because it’s such a faff to wash up but this looks worthy of having to do all that annoying washing! I love king prawns, and I love prawns with things like chilli and peppers. It looks so bright and colourful, I can only imagine how good it tastes! Will have to give this a try soon, yum.
