Creamy porridge oats bursting with delicious banana bread goodness topped with maple syrup and blueberries is the perfect start to my day. Plus, this recipe is gluten free, yay!
You may have noticed that I’ve posted a lot of gluten free recipes recently because I think there needs to be more. I don’t follow a gluten-free diet myself, however, I know a lot of my lovely readers do whether it’s out of personal preference or for medical reasons. Not wanting to leave you out, I’m on a mission to create more gluten-free and other recipes to suit different dietary requirements.
For this recipe, I’ve teamed up with Delicious Alchemy again to bring you this warm and comforting bowl of gluten free porridge. If like me, you thought that you could only make creamy porridge like this using regular porridge oats then think again. There isn’t a porridge oat in sight, instead, I’ve used Delicious Alchemy’s Rice Flake Porridge, which creates a wonderful bowl of yumminess with the perfect consistency.

- 1/2 cup Delicious Alchemy Rice Porridge Flakes
- 1 mashed banana
- 2 chopped medjool dates
- 1/2 tsp cinnamon
- 1 cup almond milk (or milk of your choice)
- Toppings

Pour all of the ingredients in a pan and stir together.

Cook on a gentle heat on the hob for 2-3 minutes until a creamy consistency forms.

Serve up and adorn with your favourite toppings.
After making this exact recipe a few times now I can’t even tell the difference had it been made with regular porridge oats or rice flakes. I will definitely be incorporating rice flakes a lot more into my breakfast routine and I fancy experimenting with them to see what other dishes I can create too.

I haven’t tried it by itself yet, but I didn’t notice the difference between rice flakes and normal porridge oats in this recipe. You get a lovely creamy texture with them too. 🙂

I’m intrigued by rice porridge flakes. I wonder if they bake as well as traditional porridge oats? Must explore!
That’s a really good question Helen! I know you can make risotto using them, but never tried to bake with them.

I love porridge in the morning. Sometimes with goat’s milk, sometimes with almond milk – it just depends how I feel. Not sure about banana flavoured though… I like bananas, just not banana-flavoured things!
