A healthy snack in cake form…yes, please! Carrot cake is one of my all time favourite cakes and will often buy a slice as a treat to go with my chai latte when we are out and about. It just contains everything that I love, warm autumnal spices, nuts and even a vegetable!
Better than shop bought flapjacks that seem to be full of additives and refined sugars, homemade flapjacks can be far healthier. You’re in control of the sugar content and you know exactly what has gone into them. Plus, it’s so quick to make your own homemade snacks and you can prepare a batch at the weekend to keep you covered for the rest of the week.

- 2 cups oats (180g)
- 1 carrot , grated
- 2 tbsp cinnamon
- 1/3 cup coconut oil (50 ml)
- 4 tbsp agave nectar
- 3 medjool dates
- 1/4 cup desiccated coconut
- 1/4 cup chopped pistachio nuts

Preheat the oven to 190 degrees and line a baking tin with greaseproof paper.

In a bowl pour in the oats, grated carrot, medjool dates, pistachio nuts, cinnamon and desiccated coconut. Stir together until well combined.

In a separate bowl, melt together the coconut oil and agave nectar on the hob or in the microwave.

Pour the liquid ingredients onto the dry ingredients and stir through so that everything is well coated.

Tip the mixture into the baking tin and pat down with the back of a spoon until level.

Bake for 15-20 minutes until golden brown on the edges. Allow to cool before portioning.

Store in an air-tight container in the fridge or in the freezer.
Dates add a lovely natural sticky sweetness and the pistachios not only lend a pop of colour, but also a different texture to these soft and chewy flapjacks. Of course, you can experiment and play around with the different add-ins if pistachio nuts aren’t your cup of tea. Traditional carrot cake recipes contain walnuts, which perhaps are more your thing? Dried cranberries would also work just as well as the dates to add a sweet note too.

What a great idea. I do love flapjacks but rarely make them as they’re a bit naughty with all the golden syrup and I’m really bad at just eating one piece!!! But the idea of introducing carrots feels like it balances that out a lot!
They can be laden with lots of sugar and butter, but not these! I do like to put a healthy twist on my favourites.

I love carrot cake and I love flapjacks, so obviously I love these. I hardly ever have flapjacks now, but used to love them as a kid. I must make them more!

I don’t have carrots enough in my life, but I absolutely must pick up some soon simply to make these! They look delicious, and like everyone else who has commented, I too love the fun, updated twist you’ve added to the humble flapjack recipe! I’d probably avoid using agave – it doesn’t sit well with me – potentially swap it for something else, or just hope the dates would add enough sweetness – maybe soak them a little so they go quite squishy, you know? I love making my own sweeter treats, simply because I know exactly what goes into them and because I can have control over the ingredients and sugar. Plus, shop bought varieties rarely live up to a homemade version!

Actually the original recipe that I developed used maple syrup, but we swapped that out for agave to lower the Weight Watchers points, but you could so used it! I love carrot cake and thought I would give it a twist!

These sound lovely- carrot cake is full of so many delicious flavours with the nuts and spices. I often make healthier flapjacks to take to work because people like things that they can have a small piece of, and they are easier to cut than cakes. Do you chop the dates or make it into more of a paste to sweeten?
