Happy Sunday!  I hope you are all having a fantastic weekend.  We had a really busy day shopping yesterday and my legs are feeling the after effects of it today.  One of the main things that we needed was a suit for Alfie, but he couldn’t seem to settle on two navy suits, apparently navy comes in many shades.  Forgive my ignorance, but a suit is a suit, right?  Anyway, we went home empty-handed in that department, but we did pick up everything else that we needed and more, including an adorable 3-piece suit for Aiden.  This has been such a productive week, Aiden has taken some epic naps during the day time, which means I’ve been able to get lots of stuff done and have some quiet time to enjoy that nice wedge of apricot and almond cake and earl grey tea pictured above.

I’ve been grateful for those long naps this week and took advantage to enjoy this lentil salad with peppers, rocket, feta cheese, tomatoes and cucumber in our garden in the sunshine.  This peaceful 30-minutes was just blissful.

Last Sunday for breakfast I made a stack of vanilla buckwheat pancakes because it had been too long since a pancake had crossed my lips.  These were seriously good and I think I’m going to have to share the recipe.   I topped them with coconut yoghurt, lots of honey and raspberries from the pick your own farm.

Baby and I have enjoyed avocado on toast this week with scrambled eggs for breakfast, yum!  AJ didn’t quite finish all of his smaller portion, which meant there was some left over for me to polish off – happy belly!

To use up another big stash of strawberries from the farm I’ve made lots of smoothies for breakfast and snacks.  This summery watermelon and strawberry smoothie is very similar to my Strawberry and Watermelon Cooler recipe but just made thicker with the addition of banana and cashew nuts.

I love simple meals like this, just chopped up bits and pieces of my favourite things.  Such a great bowl of goodness: beets, rocket, tuna, cherry tomatoes and sweet potato. I would have added a big dollop of hummus too if I’d had some, but it was still good without.

This never gets old, courgetti with an organic beef ragu sauce.  Recently, I’ve liked mine with a spoonful of cream cheese, basil and chilli stirred in at the end for some extra creaminess and flavour. 

So as you can probably tell I’ve really enjoyed my food this week.  Alfie even bought fish and chips for dinner on his way home from work on Friday night which was a lovely treat!  A quiet few minutes to myself is such a rare occasion these days because Aiden can be such an unpredictable napper during the day, sometimes I get 20 minutes and other times it’s a solid 2 hours.  I always feel that I have to use his nap times wisely and find the balance of being overly productive, but also squeezing in a bit of downtime too.
