It’s been hot, hot, hot recently! With the soaring temperatures I’ve been taking delight in drinking this fabulous concoction…
It’s safe to say that I’m majorly addicted to watermelon and strawberries at the moment. The cooling properties of the watermelon have really helped me cope with the humidity and I’ve been snacking on it non-stop. And strawberries, well now that they’re in season they taste amazing and I’ve been chomping on mountains of them. In almost an epiphany style I decided to blend my two addictions together and came up with this gorgeous summer drink which knocks spots of any shop bought sugary drink, even if I do say so myself!

- 2 cups watermelon
- 1 cup chopped strawberries
- 2 tbsp Greek yoghurt (I used 2% fat)
- 330 ml coconut water
- 1-2 tbsp agave nectar or honey
- handful of ice cubes
-
Just blitz in a blender until smooth and serve with more ice!
How pretty and pink does this look in one of these vintage beakers that have been popping up on my Pinterest lately. Obviously the pink polka dot straws are optional, but I think they add a little something to the look of this. 😉
I can really see this working as a breakfast smoothie too by adding protein powder to make it more satisfying as a meal. Also, using the same recipe and methodology you could even make this drink into popsicles, perfect on a sticky and balmy evening for dessert or late night snack to cool you down. This would also be great as a non-alcoholic beverage at a BBQ or garden party. To make this vegan you could substitute the Greek yoghurt for almond milk instead, which would still result in a creamy texture.
I love the hydrating properties of the coconut water in this as it has really helped me survive in the heat. There have been occasions where I thought I was literally melting! I’m glad that it’s much cooler now.
How have you been surviving in the soaring temperatures? Are you a fan of watermelon?
