Happy Sunday everyone! After rather a busy week full of some truly amazing new projects and much bigger things, I fancied switching off this weekend, well almost. I do spend a lot of time in front of the computer writing and using social media, so for me it’s quite a luxury to switch off and put the computer, tablet and phone away. It is difficult though I have to say and I didn’t quite manage it wholly. I have spent a lot of time making use of my Amazon Prime account and watching movies instead.
This week I made a trip to the health food shop to get a mini haul. I was actually craving raw chocolate, so was happy to see that they had a small selection on on offer. I picked up some Conscious raw chocolate which has to be on of my favourite brands of raw chocolate, and believe me I’ve tried a few, and also a Raw Chocolate Pie. They also stock Coyo so I couldn’t resist a tub of that either. Then I popped to the local ethnic shop to pick up a load of plantains, which tasted delicious fried with some sea salt:
Plantains are amazing, I have a post planned about the different ways you can cook them soon as I know some of you are addicted to them like me too.
OMG! This bowl of organic strawberries and salted caramel strawberries enjoyed in last weekends sunshine was amazing. I’m going to have to dust off my ice cream maker and create my own salted caramel ice cream as it was yum!
On Thursday night Alfie treated to me a meal out at lovely French restaurant in town.
I was quite hungry so went for three courses, naturally! My starter was the calamari and you can see Alfie’s meat platter in the picture too. For my main I had the fish pie with French beans. I was grateful that the pie didn’t come with mounds of mash, instead it was in the form of a nicely piped lattice. For dessert I went for the apple tart with vanilla ice cream. My belly was perfectly satisfied if a little bloated after all of that.
There has been some healthy food this week, honest…
The Coyo coconut yoghurt was enjoyed in bed for breakfast with frozen blueberries and melon, such a delicious way to enjoy it, so much so I’ve had this twice this week.
Organic free range eggs scrambled with some organic avocado is always a winner for breakfast. The hubby loves this combination for breakfast too.
I’ve been asked to review some Quorn products for the blog and I cooked some of the Sweedish meatballs in a tomato sauce with courgettes and served them with a baked sweet potato and steamed broccoli for a simple dinner.
Last night I cooked my healthier version of pork sweet and sour pork which was packed full of so many colourful vegetables. This was really good and isn’t sickly-cringe-worthy sweet like some takeaway versions I’ve tried in the past. I will be making this again most definitely soon.
I can’t believe how fast this week has been. I have been so busy with new projects for the blog and exciting and special meetings, which I will tell you more about this week. I’m feeling so positive and upbeat at the moment as there is so much happening, but alas it has been tiring, hence deciding to switch everything off for the majority of this weekend. Next week is set to be a good one too, with my birthday celebrations and whisking my mum off to a spa for Mother’s Day, cannot wait!

Gosh I definitely would love to switch off sometimes, I just allow myself to feel too guilty if I do :-/ yesterday was a prime example, feel so shattered as I work fairly long hours Monday to Friday, try to shoe horn some exercise in too, which mean I wake at 0530, try to do some exercise, walk the dog, leave for work at 0700, do the 42 mile commute, rarely take a lunch break (and if I do its running to the shop to get lunch/dinner supplies) then back on the road at 1745. Totally exhausted I, for once, felt I could have allowed myself a sofa day with my OU books, but I had planned a busy shopping date with friends and lots of chores I’d not managed to do in the week. The shopping was lovely, but I wish I could have just switched off!

I so get what you mean as I used to commute over 100 miles a day to London. My job was great but the traveling was a killer, especially because I tried to fit so much into my day too. Hope you got some relaxation in this weekend! X

I love Conscious chocolate- the texture of it is so good. Those raw chocolate pies are nice too- they have a mint one which is fab.
I don’t think I’ve tried that one yet, I’ll keep an eye out. 🙂
Raw chocolate? I at all didn’t hear about it earlier! But I love any products where there is a chocolate in structure therefore I definitely would fall in love with him. By the way, coconut yogurt my favourite yogurt 😉

Having never heard of Coyo, I am rather intrigued! I love coconut but I don’t feel Tesco has gotten into the craze as much as I would have liked, and that is the grocery shop near me!

I love Conscious chocolate – so yummy. I find it really hard not to constantly check Twitter/Facebook/Instagram – definitely need to make more of an effort to have breaks from it all occasionally! x

This weekend I completely disconnected from Twitter, blogs and FB. It was good but I did miss it. I think there’s definitely a balance to be had.

Love a bit of raw choc, I got some ombars for my birthday so will be enjoying those, I really like those raw choc pies too. I’ve got loads of plantain in at the moment, they are so cheap and I love them!
