OK, so who wasn’t out and about enjoying the sunshine yesterday?  The weather was just beautiful.  I wasn’t even planning to step out of the house yesterday, but as soon as I saw the sunshine I was eager to get a small dose of vitamin D and headed into town.  I’m glad I did actually as I picked up some great bargains in town and checked out the massive H&M store that has just opened.

Today looks set to be even better in the sunshine stakes, but it’s hardly sunbathing weather.  I still had to put my coat on yesterday, but it’s lovely to see our yellow friend in the sky for a change.

This week has been fantastic on the food front too:

Of course pancakes had to feature somewhere in my week as it was Shrove Tuesday earlier this week.  We had our pancakes in the evening for dinner and dessert,  These sweet crepes were stuffed with nutella and strawberries, heavenly!

Eggs have been a big hit for me this week and I’ve been eating them quite a lot.  These were 3 scrambled free range eggs with half an avocado, which set me up for the day.

Whilst out and about this week I decided to pick up lunch from M&S.  This was a new to me salad (it didn’t contain any greens) and was pretty good, especially for a protein hit from the fish.  Although it was nice I don’t think it will ever make it onto my favourites list.

Hmmm this was a lovely dinner, even though it looks a bit garish in the picture.  I oven roasted some chicken pieces in Chinese 5 spice, soy sauce and honey to make them go sticky and served them with stir fried garlic and ginger noodles and vegetables.  I just bought one of those big bags of stir fry veggies from the super market.  This is one meal that I will definitely be making again.

There has also been quick snacks and breakfasts like these Ryvita crackers topped with sunflower seed butter, blueberry jam and banana. I’ve really enjoyed snacking on fresh blackberries this week too:

I ended up eating the entire punnet of blackberries in one sitting…ooops!

This breakfast was summer in a bowl for me: Greek yoghurt, my Salted Peanut Butter Granola with chopped baby figs.  I think figs have to be one of the prettiest fruits out there!

Of course it was World Book Day this week:

I thought that I would join in the fun and treated myself to a chai latte and a slice of lemon cake to help me settle down with my new book.  The whole coffee culture thing is great and I love finding a quiet spot in a coffee shop to read my book.  I think I might try and read my book in my garden today if it’s warm enough – fingers crossed!
