Hello folks, happy Sunday – hope you are all enjoying your weekends.  It’s been a pretty great week for me for a number of different reasons both professionally and personally, which has given me a real boost.  Some pretty big things are happening for me right now, will share all soon! 🙂  I have got a niggling pain in my lower back at the moment though, which has meant that I have had lots of rest days from exercise this week and doing lots of yoga instead.  I did however make it to my spinning class yesterday morning and it felt great to break out a sweat again.

We’ve had some gorgeous sunny mornings this week  and it has put in such a summery mood.  I had this lovely bowl of fresh strawberries, pineapple, 2% Greek yoghurt and seriously nutty muesli for breakfast this week. This is one of my favourite breakfasts to have in the summer – I’m dying for some warmer weather!

Seriously yum!  I had the morning off work one day this week to attend a doctors appointment so had the time to make these super fluffy pancakes.  I topped them with honey, 2% Greek yoghurt and strawberries.  These felt like such a treat to have on a weekday.  I’m really forward to pancake day on the 3rd March.  I have the tough decision of deciding between crepes or American style pancakes…hmmm?

One of the best things about working from home is that I can spend a little bit longer over lunch.  This spinach and cheese omelet was delicious with some steamed broccoli and salsa on the side.

It also means that I have these babies at my finger tips…

This is probably one of my favourite meals at the moment.  Stir fried veggies and noodles in a ginger, garlic, honey and soy sauce topped with oven baked wild Alaskan salmon and peanuts.  It’s just so quick and easy and full of flavour that it’s such a great week day meal.

I have to say that I much prefer working from home rather than going to the office,  Not only do I get more work done, but the fridge is at my finger tips, I can spend more time over making lunch and I can have dinner earlier because I won’t get home late from the office. These are just a few perks that I love about the rare occasions when I get to work from home, it feels like such a lovely treat.
