I’m not sure about you but I find handmade gifts far more personal than shop bought ones. Time, effort and tender love and care that has gone into handcrafting a gift really makes the receiver appreciate it that bit more. My form of handmade gift is always food…of course. A few years back I made my Marbled Chocolate Bark to put in a gift hamper I was making for a loved one. Since then I always like to give out edible gifts as a small token of thanks.
If three P’s were supposed to be put together then it was these. This recipe rocks! Dark chocolate and salted pretzels together is enough for an epic combination, but pomegranate seeds and pistachios too, boy we are in for a treat.

- 200 g of dark chocolate
- 1/3 cup of pistachios
- seeds of one pomegranate
- 1/3 cup of broken salted pretzels

Break the dark chocolate into small pieces and heat in the microwave for 2 1/2 minutes. Take the chocolate out and stir to melt any remaining solids. Stir in half of the pistachios, pomegranate seeds and pretzels and cover in chocolate.

Pour the mixture on to some grease proof paper and spread out with a back of a spoon or spatula. Sprinkle the remainder of the ingredients on top of the chocolate. Leave the chocolate to set, which should take roughly 30 minutes. When completely set, break randomly into shards. Enjoy!
If anything looked more like Christmas then it’s this chocolate bark. Pomegranate seeds in the mix sounds strange, but don’t knock it until you have tried it. You get a lovely burst of pomegranate seeds with each mouthful.
You can make this ahead of time, weeks in advance and store it in the fridge or freezer until it is needed. It looks lovely housed in foodie gift bags tied with a ribbon ready to give to loved ones.
Christmas bark is always lovely to have on stand by. As you can see from the recipe instructions, it’s so easy to make that you can make a couple of batches at the same time. It is easily adaptable that you can literally throw anything in to create a special gift or treat for yourself.

I love the sound of this- I suppose the pomegranate bits are a bit like having raisins or something juicy in there. Plus it is the perfect colour combination for Christmas.
This year I have made two types of fudge- Christmas pudding, and peppermint chocolate. I have made jam before, and spiced nuts (in fact I have the nuts, just have had no time to make them yet). I do love receiving home made gifts too – someone at work made me a Christmas card and it was amazing.
You’ve reminded me that I need to make some spiced nuts, love them at Christmas! 🙂
