Honey and Almond Butter Cookies

Last week when I fancied getting to the baking groove, I had cookies on my mind.  When it comes to cookies, they have to be soft and chewy and full of flavour. With that said I love a classic flavour combination and the traditional chocolate chip cookie is always a winner in my book.

Cookies with a large glass of milk before bed was one of my favourite treats as a kid. These were always shop bought cookies.  I baked with my mum a lot when I was younger, but we always made delicious cakes.  Growing up I promised myself that one day I will produce the ultimate American cookie recipe and I think that maybe I have come true on that promise with these cookies.

A delicious grain free American style cookie recipe.

Ingredients
  • 1/3 cup almond butter
  • 1/4 cup ground almonds
  • 1/3 cup honey
  • 1 whole egg
  • 1/2 tsp of baking powder
  • 1/4 cup dark chocolate chips
Instructions
  1. Preheat the oven to 160 degrees.
  2. In a bowl beat together the egg, almond butter and honey until smooth. Mix in the ground almonds and baking powder until well combined then add in the chocolate chips.
  3. Take tablespoon portions of the cookie dough and place on a prepared non-stick baking tray. Leave a 2 cm gap between each cookie as the mixture will spread whilst baking.
  4. Bake for 8 minutes for a soft and chewy cookie.
The almond butter alone in this recipe is enough to create a buttery soft cookie even in the absence of regular butter.  Of course the almond butter also lends a wonderful nutty taste which works perfectly with the dark chocolate chips.  With only 6 ingredients these are so easy to make.  I adore fuss free cooking!

I have made these cookies grain free by using ground almonds as a replacement for the flour. The ground almonds hold their own in creating a great cookie texture.  These can be refined sugar free too if you omit the dark chocolate chips or replace them with cacao nibs.
