Thank you for all of your help yesterday! If you tried to access my blog yesterday then you will know that I had run into a spot of bother, but all is well now, thank goodness. Other bloggers out there I highly recommend that you install all of the firewall and internet security plug-ins into your blog so that the same doesn’t happen to you.
Other than the stress I had over my blog yesterday, it has been a pretty good week. I’ve been feeling pretty refreshed all week after the bank holiday weekend. Ah, if only every week could be 4 days long.
Going to my hot yoga classes has meant that I have been focusing on re-hydration a lot lately. Coconut water is great for this and I’ve been obsessive about it.
I tried this peach and mango flavour after my hot yoga class on Saturday and it really hit the spot. Loving those tropical flavours!
Another tasty treat on Saturday was these stuffed chicken thighs for dinner. We got in late from our trip into town so I wanted to cook something quick but delicious. I stuffed the chicken thighs with chorizo and made a tomato sauce from onions, green peppers, tomato puree, fresh parsley, chicken stock and black olives. This certainly satisfied my want for a great Saturday night meal in a hurry. The fresh salad and avocados went great with the warm flavours from the chicken.
One of my favourite mid-week meals has to be this lovely warm salad:
Mixed leaves, left over roast chicken, red peppers and plantain, so good!
All week I have been feasting on this delicious salad that I made for lunches for work. I made the bulgar wheat part at home using bulgar wheat, chopped mint, parsley and coriander, spring onions, tomatoes, cucumber,feta cheese, lemon juice and olive oil. It’s handy that my work office is on the high street so that I could grab a bag of salad to complete this tasty lunch.
Other than my usual smoothies for breakfast I tried something a little bit different for breakfast this week:
I was sent some bread to review for the blog that has half the carbs of normal bread by LivLife. To be honest I don’t really eat that much bread but I really enjoyed this one and topped it with wild blueberry jam and had it with a chopped apple.
I’ve also been enjoying homemade vanilla yoghurt, salted caramel dark chocolate and frozen cherries for dessert.
Have you tried coconut water before? What is your favourite coconut water brand? Do you have a favourite flavour? I love that coconut water is becoming a big thing in the UK now. There are some great brands out there and I think the Vita Coco peach and mango is my favourite flavoured coconut water and Pret stock a delicious plain coconut water.

Glad you got the blog sorted, I really think that running a website can be one of the most stressful bloody things ever! Can I ask which plug ins you recommend? I think I need to make sure that mine is sorted! I got some of that bread too but by the time I was back in the office it was almost past it’s best before so I’ve popped it in the freezer!

I love coconut water- I think cocofina is my favourite plain, as it has no additives or anything, and the Vita coco peach and mango is my fave flavoured one- just had some this morning 🙂

I love coconut water, always use it during long runs and after tough, sweaty workouts. Vita Coco used to be my favourite, but I don’t like that they now add fruit sugar to standardize the taste. Cocofina is my go to now! I’m craving plantain now!
I keep hearing great things about Cocofina. I really need to try it!

I have never tried coconut water. But that bread looks amazing – I eat a lot of bread so anything with half the carbs sounds good to me.

Oh I feel your pain with blog issues, I re-launched mine and within 5 hours it was down! I’ve since had so many things go wrong, it’s stressful right?! Everything looks good to me now so I’m assuming you got everything fixed up well 🙂
