Despite the changeable weather that we have in the UK right now there has been lots beautiful sunny evenings.
On Wednesday evening I couldn’t wait to get out and go for a leisurely run and walk. I think I probably covered about 4 miles in total and decided to stay off the main roads and head more off the beaten tracks through the countryside. The fields went on for miles and I had lots of cows and sheep spurring me on my way, lovely!
Food this week has been been a nice balance of healthy and treats, perhaps a bit too much chocolate too…
On Sunday night rather than the usual we had a platter made up of baked camembert spiked with garlic and rosemary, Serrano ham, salami, grapes, celery, apples, crackers and ryvita’s. This was the perfect comfort food on a Sunday evening. I think it may have been cloudy and raining that evening too so it was the perfect atmosphere to settle down in front of a movie with a cheese platter.
There has been lots of salads and stir fry’s for dinner:
Mixed leaves, jollof rice, roasted veggies, left over roast chicken and hummus
Stir fried veggies in a char sui sauce with king prawns
This bowl of stir fried veggies was amazing! I topped it with some king prawns fried in some tikka masala curry paste. Simple, easy, delicious, just the food that I’m loving right now.
I’ve been mad about fresh cherries this week…
I made a dipping sauce out of peanut flour, chocolate chips and coconut to dip the cherries in, heaven!
Of course there has been the usual green smoothies for breakfast but I’ve also been enjoying cottage cheese with fruit and almond butter too. This bowl of white peaches, strawberries, honey, cottage cheese and Raw Chocolate and Berry Trail Mix was super yummy.
These vanilla Spelt Flour Pancakes on Sunday morning with roasted peaches, and sour cherries and Greek yoghurt definitely put a smile on my face. =)
It was definitely the right idea skipping my usual gym workout to go on that glorious run. The sunshine was just too good to miss and the heat had died down so I felt comfortable whilst running outside. Taking a different route, off into the countryside was just lovely. I just love how flexible I am now with my exercise routine. You would never have seen me go off schedule before, in fact I think I was far too regimented. Going with the flow sometimes is way more fun!
Do you go off the beaten track sometimes with your workouts and do something completely different to what was planned?
Do you find it easy to allow flexibility in to your workouts and change things up?






Everything looks SO good! Wowza. Especially love the cheese platter – we love doing this, too! Last time we made this baked almond feta: http://www.maplespice.com/2011/04/baked-almond-feta-with-dill-oil.html and had it with Ritz crackers or french bread, grapes, pickles and chutneys and shredded lettuce. I suppose it was more of a ploughmans!

Spinning is really tough but such a fun class, glad that you are enjoying it.
It’s been beautiful in the evenings just lately. I’ve tended to go for a run around the lake and at about 7:30-8pm the light hits the water just right and it always makes me regret not running with a camera!

The temperature is much better for running right now than it was a few weeks back, early mornings are just perfect. I’m actually terrible at going off plan, I like having a structured routine in place, and sticking it. It’s good to go with the flow sometimes though!
Yes, running in those temperatures must have been uncomfortable.
Cheese platters are my fav! I love red grapes in them and cheddar cheese, yums. That cottage cheese and strawberry thing looks delicious 🙂

That sounds like a gorgeous path! I live in the city, but sometimes I’ll go a little further away and run by the river and it’s just such a nice change!
A change of scenery is great. I would love to run by a river.
