Friday, it’s so lovely to see you again! I hope that you all have had fabulous weeks. It’s all been about work for me, but I have some lovely plans for the weekend.

Since I’ve been really busy this week my meals have been very simple and pretty much centre around protein and veggies for ease.

Ha! The pattern from my baking tray imprinted itself on my chicken breast.
On Monday night I made use of some chicken that I roasted up at the weekend. I had a roasted chicken Brest with a buttery baked sweet potato and roasted courgettes and onions topped with feta. It sounds like quite a mish mash but it was incredible. The feta and the roasted veggies were seriously yummy!
Lunches and even dinners this week have involved salads:

I loved this! Mixed salad leaves with tomatoes, peppers, left over roasted courgettes and onions and roasted chicken breast, so good! I had this for lunch and dinner this week and it was very satisfying.
I’ve had a few breakfasts at work this week which have all been yoghurt messes: Greek yoghurt, raspberries and muesli. Otherwise I’ve had my breakfast in the car in smoothie form.
This was just a basic banana, spinach and almond milk smoothies…sometimes simple is best!
Every week I always treat myself to a spiced chai latte. They have just opened up an new coffee shop near work so I was dying to try their version of my favourite drink.

It was much spicier than Starbucks version and you could really taste the cardamom kick. I will be going back for their iced version at some point too!
Nakd bars are always good for healthy snacking…

Right now I think this gingerbread one is my favourite, swiftly followed by the chocolate orange version.
I’ve been really I to my black berries this week, they are just bursting with deliciousness.

I seem to be on a bit of a ginger bread kick at the moment. For dessert the other night I had half a carton of blackberries with frozen cherries, coconut cream and gingerbread syrup…amazing! I wanted to lick the bowl clean.
A long time ago (well it seems that way!) I would have automatically reached for the pizza and Chinese takeaway menus for dinner options during a busy week. During my healthy living journey I have picked up so many tips on how to eat well and prepare quick and healthy meals when pushed for time.

I think nakd bars are definitely my favourite healthy snack bar, as they are about as simple and unprocessed as they come. My go to meal is usually stir fry as it’s easy to just chuck a load of veggies and some beans in a pan! Have a great weekend!
They are pretty impressive and full of goodness. I love stir fries too- really easy to just throw together!
Nakd bars are top of my list- the mint one or the gingerbread one are my favourites.
In the summer my easiest meal is a salad with some tofu in there (I love that basil tofu).
Basil tofu…I haven’t had that in ages. It’s really tasty!
definitely smoothies. Some fruit, some greens, some liquid and you have an instant satisfying and filling meal. And they are so versatile.
I also love snacking on Nakd Bars, the cashew one is my fave.

You can’t go wrong with feta! I love it. Simple meals are the best during the week. It can be tempted to just say “oh let’s have an Indian” but throwing together a healthy meal is far more rewarding, cheaper and better!
