There’s nothing like pancakes to start your weekend. After a busy week, having a leisurely breakfast that you have lovingly spent your time over is extremely satisfying. I never have the time to make pancakes during the week, so making them at the weekend makes them even more ceremonious and such a treat.
I featured my Spelt Flour Pancakes in a blog post recently and a few of you have asked for the recipe so I thought it was about time I shared.
Ingredients (makes one large or roughly 5 small pancakes)
1 cup spelt flour
1 egg
1 1/2 cups of your milk of choice
1 tsp baking soda
a pinch of salt
In a bowl pour in the flour, baking soda and salt, mix well and make a well in the middle with a spoon. Break the egg in the centre of the well and add the milk. Incorporate the wet ingredients into the dry ingredients and beat well until well combined.
Either make lots of small pancakes or one large one. Heat a frying pan until it’s really hot and add a drop of oil. Pour in the batter and wait until small bubble appear in the batter, signifying that the underside is cooked. Flip the pancake or pancakes onto the other side and cook for a further few minutes.
Serve with what ever accompliments that your heart desires.
I really enjoyed mine with fresh blueberries, Greek yoghurt and honey. However, you could really go to town with fruit compotes, jams, fruits and spices. Next time I’m going to try them with cinnamon and vanilla in the batter with roasted peaches. I’m smiling at the thought of all that yumminess!

Thanks for this Jemma, what a simple and lovely sounding recipe. I often use spelt but I tend to mix it with peanut flour (for a little more protein) but then I don’t normally use eggs in my pancakes. Gosh, a favourite topping? Cooked blueberry are delicious, or bananas with a little chocolate nut butter (or nutella). But most things are fab!

I love pancakes, I made a sweet socca after my long run on sunday and filled it with caramelized plaintain, cacao sunwarrior sauce and walnut butter, it was decadent.
I love socca for breakfast as a change. I like your idea of filling it with plantain, yum!

i make spelt pancakes all the time! but thank you for the recipe as I always struggle with the proportions of flour to milk to egg! have got some lovely agave cherry compote from le pain quotiden that I’m dying to try tomorrow for breakkie 🙂 xxx
