Wimbledon and strawberries go hand-in-hand. I for one cannot live without strawberries during summer let alone the tennis tournament. Now that we are in the last week of Wimbledon we are planning an afternoon tea party at work with bunting galore.
A traditional British afternoon tea party usually consists of finger sandwiches, scones, and an array of cakes, but why not change things? I decided to get my thinking cap on and come up with something different which still sticks to the strawberry theme.
With the lovely weather that we have been blessed with in the UK recently I thought a frozen dessert would be perfect. Iβm a big fan of cheesecake and admittedly they are not the healthiest of desserts. Instead Iβve created a healthier option with almond and date crust and low fat filling.
Ingredients (makes 4 cheesecakes)
For the base:
1 cup of soaked almonds (soaked overnight)
7 pitted dates
For the cheesecake layer:
1/2 cup quark
1/3 cup of melted coconut oil
2 cups diced strawberries
1/2 cup runny honey
Zest and rind of 1 lemon
In a food processor combine the dates and soaked almonds until a crumbly texture forms. Add a few drops of water if your processor is struggling. Take roughly 1 1/2 tbsps. of the mixture and place in 4 tartlet cases, using the back of the spoons to press the mixture into the tin. Bake sure that the surface of the base is smooth and that there are no air pockets, it needs to be tightly packed.
Place the tartlets in the freezer whilst you prepare the cheesecake filling.
Take the food processor again and add the quark, coconut oil, strawberries lemon juice, zest and honey and mix until smooth. Take the almond bases from the freezer. Evenly distribute across the 4 tartlet tins, filling them to the top. Return them to the freezer and allow them to set for at least 5 hours, overnight if possible.

These honestly do taste as fabulous as they look. The recipe for the filling does make a little bit extra, but you can freeze it to make ice cream or cheesecake ice lollies, yum!
Iβm really looking forward to the Wimbledon finals, it really has been a great tournament this year. I think we might get a few friends over and have a BBQ if the weather is nice and catch some of the tennis too. You can even make your viewing of the tournament more fun by playing a little Wimbledon bingo.

I love crusts made from almonds and dates, and the strawberry filling sounds fantastic. I’ve never really been into tennis so I won’t be watching the finals, but I wouldn’t mind whipping up an awesome dessert.

These look seriously delish! The boyf has just bought some tartlet tins (admittedly to make unhealthy things) but definitely considering stealing them to whip these up. Quark is a funny one – always see it in the supermarket but never have any ideas as to how to use it but this is a great one! Will be interested to see how the date/almond crust works out too π This may be a silly question but do the almonds have to be skinned or leave the skins on?

I tried quark once, cos it sounds fab, but bleurgh – what a horrible after-taste! Maybe it’s changed since then?
