Happy Friday folks! I hope you have all had a great week and have some lovely plans for the weekend. There’s lots of chill time and movie marathons on the cards for me this weekend, just what I need!
Last night I had a lovely dinner of baked salmon. I stir fried some veggies including mushrooms, peppers, broccoli, spring onions and pak choi in some Thai red curry paste and coconut milk. I left the salmon plain and baked it in the oven, it went really well with the veggies and sauce.
This week I have been eating breakfast at work so they have been a little bit competitive. I went shopping for bits for work and so I could save some time by having breakfast there.
There has been plenty of bowls like this all week. To be honest eating breakfast at work has been a God send. I’ve got a post coming up about commuting and some hits and tips soon.
My week week wouldn’t be complete without the odd green smoothie sneaking in there. This was a basic spinach, banana and almond milk smoothie. A great place to start if you are looking to dip your toes in the world of green smoothies.
I filled a lunch box full of raw veggies and bought some hummus to keep in the fridge at work. Pretty much all week I’ve been having this for lunch and surprisingly I haven’t become bored of it yet.
I did mix it up a bit though with some leftover Courgette, Spinach and Pesto Soup, heaven!
In regards to the blogger meet up, it’s so nice to hear that so many of you are interested. London seems to be the popular location, but I know that this isn’t going to work with everyone so perhaps we can organise another meet up at a later date.
Date wise I thought the 17th or 24th August would be ideal. It’s not too far away and it allows for those travelling by train to get advanced tickets to London as I know it’s not cheap!
Please let me know how you feel about these plans. Obviously, they are not going to suit everyone, but try and make it if you can it would be lovely to meet you. I will keep you posted on a definite date once I get some feedback.
Do you eat happily eat the same meals all of the time?

Hi, Jemma. I’d love to ,,meet up with other UK bloggers. I’ll be moving within the next month to start a new job, which is going to be quite far away from London. But if I know about the meet up in good time then I’m sure I could make it and travel home to my parents the night before and then travel to London the next day. For me it would have to be a weekend, as I’m starting a new job, don’t really want to take time off during the week. So 17th August could work for me. If I book my trains well in advance.
It would be lovely to meet you. I will see what the general consensus is regarding dates and figure something out. 🙂
I eat my breakfast at work quite often after CrossFit, I’m pretty good at packing a great filling breakfast by now!
Not sure if I will be able to make it to the meet up, as it is my last month at home before I move, so I have a lot going on, plus it’s quite far to go for one day,( About 9 hours on the train!) so I would consider staying a night, but that just adds to the cost: if I book soon I could get train tickets for £40-£50 so still not cheap! If I am able to make it, teh Saturday would be better for me. I really would love to see you again though, and meet lots of new bloggers! 🙂
Hopefully you can come, I totally understand the issue with the train travel cost. I’ve been commuting to work by train the past few week and its so expensive.
I eat my breakfast at work as it saves me time in the morning. I keep a box of cereal at work and then every Monday I buy a tub of fruit (blueberries, raspberries etc.) and chuck a handful on top of the cereal. Super simple!
I’ve been doing the same this week and it’s so handy and saves so much time. 🙂
I’m trying to eat a much more varied diet as for the last year I’ve simply eaten the same foods over and over again! I absolutely love them but know variety is the spice of life so trying to broaden my diet a little. Either date sounds fab to me, can’t wait!
I definitely can’t do the 17th but would try and get down for the 24th – might try and do that park and ride thing!

I can eat the same meal over and over if I love it enough…it’s an issue sometimes haha.
